Can any of them do 1440p at 160/160hz? Cause that'd be the max of my monitor. And are there any cards that do the heavy lifting on their own so that the PC doesn't have to stress? I'm used to the Avermedia Live Gamer Portable. It does the encoding on its own so the PC can use all it's power to play the game/stream at maximum potential.
What use do you have for 8K capture? Probably not gaming I'm guessing since there aren't really any games out there that make sense to run at 8K with current GPUs...

Some games like Watch dogs 2 (most likely more as far as my knowledge goes) can have watermarks as you screen record. As well as when cutscenes see shown in-game, sometimes the ps4 will not record for whatever reason, and resume recording when the cutscene is finished. Not only do capture cards prevent this, but it's also easier to manage and get on your computer. Instead of having to wait several minutes to port the video over to your computer for editing. In short, easier to use, manage, and no missed clips

Still got my Elgato 1080p 60FPS external capture card and that works well enough. Shame I've not done anything useful with it!
