The easiest way to defeat any Lynel in botw is by using your power ups like Urbosa's Fury to stun, Revoli's Gale to get bullet time and get some head shots. When an opportunity comes to mount the Lynel do it, because hitting him this way doesn't damage your weapon and when he throws you off you can get bullet time again and get more head shots. Hope that helps!
