I gotta admit that I was a bit unsure of the smoked cheddar but, I think it's worth trying. Adding the bacon makes everything right :). This looks really yummy!! Thanks for sharing!

I save my bacon grease too...I've made baconnaise.....mayonnaise made with the bacon grease and some avocado oil or it sets up too hard in the refrigerator. The bacon in the mac n' cheese sounded great!! Have you ever made mayonnaise? I make it now instead of store bought and all the soybean oil and added stuff. Tastes different but good and 'clean'.
