Just made these, I really, really like them, even more than chocolate cupcakes or blueberry muffins. They taste sort of sweet, but not that sweet that you'd only want one, the apricot flavor and orange note balances everything out perfectly. Thanks for this wonderful recipe!

Thanks for the recipe. The oats are an especially nice touch. It's cool you like to put orange zest in a lot of your baked goods. Same. It's an amazing flavour enhancer, especially when coupled with with winter.
I see this is an old post so I'm yet to see if you've started including metric conversions to your measurements. The oats got me on this recipe, but usually I bail if its all cups and saucer measurements. ;-)

cup cakes are miniature cakes I think, muffins usually have something other than basic batter in them. So like blue berries, chocolate chips, nuts, ect.

I used to live in the US and loved the muffins I used to get there. With thse huge crunchy tops. Why noone gets them to look huge with those tops at home? Is there a way to make them look like in the bakery, Laura?

@WoodenRoller The healthiest option is canola oil, which has less cholesterol than butter (olive oil is even better, but not good for sweet recipes like this). However, if the alternative is something like palm oil, which has tons and tons of cholesterol, you might be better off with butter (check labels to be sure).

@firadawas101 Cupcakes are more of a dessert delicacy. Has more sugar, more butter, and therefore, is sweeter, like a dessert should be. Also, while muffins are bread-like, cupcakes are softer and more crumbly and airy. Hope this helped! :)

Hi Laura--I went to the website to get the quantities and I noticed you have "¾ cup of Unsalted Butter at room temperature" among ingredients--but you didn't use butter in the demo video ^_^

well muffins are normally just eaten the way they are, they don't normally have frosting or icing just plain or some sugar or something similar. Cupcakes however, have frosting or icing on it and its the smaller version of a cake.

1370np it was dry because you added dry apricot. Dry fruits dry the moister out of the cupcakes. So next time, just use fresh apricot😉😉😉
