This burger is better than Au Chaval without the wait. Plus they're open until 4 am.
Make sure to hit the 3055 N. Ashland location. The other location just started making burgers, and their grill isn't fully seasoned.
There's a lot of Science in the sear of a smash style burger :)

That's exactly how I have cooked my burgers for years and everyone loves them .regular 80/20 ground beef, salt, pepper and garlic powder. Kraft singles. It may not be gourmet but it's Awesome !!
85/15 %
I replaced Kraft singles some time ago it just started giving my burgers an extremely milky ass taste I went with white and yellow cheddar... But the best cheese in my opinion is mexican manchego which i only eat once a year when i go to Mexico.
Iron Man I know what you’re talking about my dad lost his job for a year and we had that big long brick of government cheese reminded me of velveeta cheese.
Kraft cheese is plastic
try kraft deluxe. 100x better than regular kraft.
A very hot grill gives you that beautiful burger crusty goodness. That's all flavor! I need one. Nicely done.
uncjim same!
uncjim get yourself a iron skillet and we’ll season it. Put the skillet on high and you cannot go wrong!
Yup! 100% heat is your best friend! The #1 mistake people make when doing smashes is not enough heat. Mistake #2 is not smearing with your (perfectly flat)smasher. If you don't have enough heat, and you don't crush and smear, your meat will shrink and swell, and you will end up with just a standard old griddled burger instead of lacy smashes goodness. Again, **HEAT** ! Look how black the season is on that griddle! Homeboy is doing it right! That thing is sitting at 600°F at all times as it should be! See how fast it toasted those buns, too!
He really cooks the heck out of those patties! No salmonella there I betcha
Bruh that grill blacker than akon
Roosy Urivia I’m literally LOL 🤣🤣🤣
The ingredients, the recipe and the actitude of Carlos is 100% quality and dedication, congratulations, the only negative thing is the very dirty grill, if from the first use they dedicate 15 mins to clean, the grill would be clean everyday
So true I worked in that industry for years. I never understand why the grill doesn't always shine. I never accepted a non-shining grill as a manager and as a cook and a chef
I guess a lot of people still don't know about the smashed burger technique. The point of smashing the burger on the grill and giving each side a charred crust is to maximize the Maillard Reaction on all surfaces. Basically, think of searing a steak, except instead of just the outside, you're searing as much surface area as possible. Makes sense because we're cooking ground beef here, not delectable filet or ribeye, so you wouldn't cook it the same way as you would a good steak.
You can read more about it here:
aht.seriouseats.com/2012/09/the-burger-lab-smashed-burgers-vs-smashing-burgers.html
In any case, there are only two chains that smash burgers this way AFAIK: Smashburger and Shake Shack. 5 Guys is sort of close to this concept, but they apparently don't smash the patties on the grill, but rather before they place it on the grill. The results are similar, but not exactly the same.
All 3 chains are fairly expensive for fancy fast food, but the burgers are usually great. Instead of a soft and vaguely beefy patty, you get a crisp patty with the nice seared flavors and texture in every bite.
I myself can appreciate both the big 6-8 oz flipped burger as well as the thinner smashed burger. But if your ground beef source isn't coming from good steak trimmings or other great sources, consider the smashed burger technique to improve the flavor.
Hell yeah!
you never smash a burger paper thing!!!

Culvers... Pretty sure it's smashed. It's way better than smash burger, that's for sure..
Still not a fan of the smashed burgers in general. I get the concept; I just don't think it makes a better burger. Not for my taste at least.
@@lawrenceshdow
Haven't had or seen a Culver's yet. Looks interesting. I will try it if I ever see one.

These kinds of places are wayyy better than any restaurants chain!

I was born and raised in the Great Lakes area, so this Chicago hamburger really brings back memories.
Something special about the hamburgers, hot dogs, pizza, fries, stuff like that, in Detroit, Buffalo, Chicago, and even though it's not Great Lakes, New York, always hits the spot. The lettuce and tomato matched perfectly, too.
I could feel my arteries hardening as I watched, all that lettuce.
More lettuce than meat SERIOUSLY!!!!
i loveeeeee smash burgers, its the only way i cook burgers these days. i wont go that thin tho
You can go thin on the double

Smash it flat push all the juice out yeah that's how it's done lol 😜 stick to pizza Chicago.
That's how a lot of people like their burgers.
Clearly you're not from chicago, and do not know that chicago has a million burger places and each one makes their own kind. THICK OR THIN. If you're into gourmet Burgers, next time you're in chicago check out the bad apple ,five star bar or the burger point. Im sure chicagoans have even better spots for some good burgers. But give those a try and you wont be disappointed.
If you smash it right away, no hot juices have formed yet. You just can't press it later on. Stick to McDonald's.

Doesn't matter which location, Ashland or Western, they're both great. I worked night for six years and this was a must whenever my route took me to the Northside. Hahahaha. Looks like the skinniest burger ever seen. Looks terrible
Where's the meat?
Ray Ray ikr. Everyone is like “wow so good” the bun is barely toasted, nothing is seasoned, the toppings are ON TOP OF THE PATTY! The lettuce and tomato is supposed to be on the bottom to provide a layer of protection to the bun doesn’t get soggy, it’s supposed to have a nice toasted patty so it doesn’t get soggy as well. The cheese is recycled plastic. The result burger is messy and disgusting. Fucking terrible
Same thing I was thinking when I watched this video. That old 80s catch phrase!! Love it

If this is Chicago's BEST hamburger....why did they need to buy out Texas Whataburger?
This looks so much better than Whataburger. That place sucks.
Thanks for video. But you using the scraper instead of the spatula. Thats a charred burger all right. The smash burger is excellent, but throw the onions underneath the burger after the first flip. It grills the onions and the burger soaks up that great onion flavor.
