It takes practice and effort. Also maybe the mango wasn't really that ripe that it has a bit of hardness to it. Or maybe the mange was chilled somewhat hard that it won't fall apart but easy to work with.

Jamy James Mango purée plus whipped cream and gelatin mixture. I don’t think it would hold well if you just use the purée without the gelatin.
