It's easy to guess that "bun" rice though as for how it is held together without crumbling it's because they use glutinous rice aka sticky rice. It's that simple.

I think Korean tonkatsu is more of an 'old style' Japanese tonkatsu because it's brought to Korea in 1925 and it kept that original recipe, tho I imagine the sauce would be modified a bit to fit the korean palette It used to be served with cream soup, kimchi, danmuji and you get to choose between dinner rolls and rice. They didn't give you any chopsticks or spoon but gave you knife and fork instead, because it's considered as semi-western dish/light western dish경양식(I believe the term is from Japanese ようしょく which is Japanse style western dish). It's considered as a fancy meal, and mimiking western culture was "cool" back then Nowadays, it's not very popular anymore, many people prefer modern Japanse style tonkatsu. Then still it has it's place, because it's more easy to make, more affordable and has that nostalgia
