    How is the parchment paper piping compared to one from a ziplog bag?

      I find it much better, ziploc in a pinch, parchment is always best to have on hand. Much more precise since the tip can be cut super small for intricate lines and detail

    When do you use the swiss meringue buttercream vs. the normal vegan buttercream?

      depends what Im making really. The regular is sweeter, the swiss is silkier and less sweet but also takes a bit more time. So if Im super lazy I use the regular LOL but for the most part I like the swiss for all the reasons I mentioned. This to me was a kids style cake and the regular buttercream is closer to the recipe I used when I had my bakery. And everyone really loves that one!

    what's the difference between cake flour and all-purpose?

      cake flour has lower protein and will absorb less water (or liquids in the recipe) also form less gluten structure so it keeps cakes tender, I often use AP though as it is a blend of cake flour and bread flour

      Thanks!!! Looks like I can replace 2 tbps of ap flour with 2 tbsp. of cornstarch per cup of flour to make it cake flour. The link is helpful! Thanks you!

    are the pans 2" or 3" deep?

      @@GretchensVeganBakery I won't get these in time for me to try it this weekend, if I was to make 2 -8 inch or 2 -9 inch pans, can you tell me how long to have it in the oven. Wanted to try it for this weekend. So I would do it 2 layers instead of 3 so it's not thin layers
