I rely on ad revenue as my sole source of income as I share endlessly my knowledge and professional recipes. Meanwhile all of those ads generate less than $150 a month for me ~ that's $150 a MONTH! Not even CLOSE to the cost of buying ingredients. Thanks for the support

I just got hired at publix bakery and I'm still learning how to write on cakes. I'm guilty of holding it like a firehose haha.
I am in the same boat. Got moved to the bakery because they learned I am an artist. Learning to write and pipe frosting is a whole new world! Good luck to you my frosting covered friend. Hope you enjoy the process.

I practice with melted chocolate on parchment paper then I let it harden and take it out to place it on a cake or cupcakes

What's the difference between print and script writing?
I usually adjust the tip size to the size of the cake; how much room I have to write. A really small cake or cupcake I use a #1, larger (up to a sheet cake) #2 like you do. If I have to write on a large sheet cake I go to 3 or even 4. I find it helps if you're trying to stretch out the words on a large cake. But that's just me...LOL.

In culinary school my teacher had us pipe out happy anniversary in the skinniest loaf pan ever lol it sucked! But taught us
The art of writing on cakes is simply lost in some parts of the world. The other day I went to get a cake for my brother. What the person working on the counter (I refuse to call him a baker; he should no better if he was one) did was that he just took a plastic board saying "Happy Birthday" and he stuck it into the cake like a candle. And then on a piece of wafer, he just wrote my brothers name with some liquid jam. Felt like such a rip off!

my question is: what is your preferred way to flavour icings? extracts? essences? fruit? sometimes I want an icing that is really flavourful and I can never seem to get there without sacrificing the consistency in some way. what are the pros/cons of the different ways to add flavour to icing (if you've already touched on this then I'm sorry lol)

If its chocolate and a cold cake, you can get it off pretty easily

+basma huhu Hope you don't mind me chiming in here.... if it is buttercream frosting you can just let it crust over and lift it off with a toothpick... if in a hurry and no time to let it crust you can gently scrape it off with a tooth pick and if any small spots remain you can apply a little of the frosting used to frost the cake to cover up your mistake.

How to write with whipped cream?
I wouldn't do it, I would ice a cake with whipped cream, but write in chocolate or buttercream

I know how to write words on the cake.
How do you get moist cakes when you take out the fat, & replace it with fruit purees; when you've taken out the eggs, the milk, the butter, & replaced them all with fruit purees, flaxseed meal/gel, etc.? I'm not a professional baker, nor a seasoned home baker. I've only got a few years real baking experience, & my gluten-free cakes are not coming out moist, never mind fluffy. Hah!! They are edible, & sometimes even tasty, but just not moist, fluffy, bouncy, & what so many people are looking for in a cake. I will, no matter what, if at first I don't succeed, try, try again, but still....if you have any answers or suggestions for how to achieve moist & fluffy in a fat-free, gluten-free, vegan cake, please do tell me.
Michelle Lindholm you could try flavouring the cake with a syrup after it's baked- use a juice or flavoured sugar syrup itself which compliments your cake and frosting flavour
