    So beautiful! Thanks for the tips but I have one question!
    If your gonna write name on the side of the cake is it better to use chocolate, piping gel or some sort of buttercream? I’m doing a 3 tire cake for my cousins baptism and I’m gonna write here name on the 2:e tire and this is my first time writing on a cake

    Hi Georgia! I found your channel a couple of days ago because I want to make my 18th birthday cake by miself, and I was looking for inspiration. I completely fell in love whit your recipes, how you explain things and how sweet you are! I think you are a professional patissier since you often mention the school you went to. Cakes and desserts are my passion but I'm really confused and I don't know if I should pursue my passion or not. I feel like you are a really nice person so I want to ask you if you have always been sure that baking was what you wanted to do. Sorry for any mistake, I'm Italian.

      I think if you don't see yourself doing this forever it's not for you. If it doesn't excite you to get up & do it every day its not really a passion. Its more like a hobby/pass time. I went to culinary school & realized I enjoyed cooking, just not for other people/mass amounts repeatedly every single day.

    What a Great Lesson! You have Beautiful handwriting and should have templates with different sayings and phrases for people like me who have slightly shaken hands when it comes to the written words, 😉. Thanks for explaining things so easygoing and easy to understand. It helps me out a lot as I am not quite as young as you and my marbles are getting a bit scrambled in my head.

      Thank you! You can find lots of templates online - or even just print out some text and practise over the top of them! It's all about practise!

    Cheers Georgia, My name is Jill and I am from Ireland but have been living in America for nearly 40 years, wow, that’s a long time to be away from home. My question for you is where did you go to school to learn Cake Decorating and baking and how long were you enrolled in the class? What was the name of the class and was it strictly cake Baking or did it include Baking Breads and Pastries as well. I have seen some schools here in the states that offer training in decorating but maybe not having baking or breads but not pastries. Bakeries and Butcher Shops seem to almost be dying business’s here sadly and have gone by the wayside of big money. You can’t get special or Specific cuts of meat because it comes from a Warehouse in God only knows what country and with what Fillers and Additives included for NO extra charge! Because of these reasons, I have to have hope that the corner Bake shop will never have to shut there doors and the same for the Butchers meat markets. I want to know what farm in Ireland my Leg of Lamb came from. And I want people to be able to come to my Bakery and ask for a particular type of cake or cookie for the next day even if it’s not on the baking schedule and tell the customer that I have to check with the boss. Then I look in the mirror and say, “What do you think Boss?“ Of course I can’t turn down a loyal customer or a customer who will become loyal in the future! Make sense?

    I can not pipe the chocolate like you did, it sets too fast. It just won't stay liquid for me to pipe it properly. I am using dark chocolate compound! What to do? Working in room temperature, not in an AC room!

    How do you keep the chocolate workable once piping with it? I find that once in the piping bag I need to work quick before my chocolate hardens

      Somewhere warm - on top of an oven help! You can always gently microwave it too :)

    You need an over the TOP of you Camera (above you) so we can Watch you in real time WRITING.
    It's hard to SEE what you're doing when we are Watching you so far away and it looks UPSIDE DOWN to us... like at 10:38

    The sub-title covered the presentation.. You can no longer see what the demonstrator is doing... Sub title is a destruction of the whole video

    Can I pipe onto baking paper, allow it to set and then peel it off the paper and put it on the cake then??

      You need to be very very gentle with tht and it can break

    Hi georgia loved your video can you please tell if we can use this same chocolate to write on a baking paper and then later put it on top of thé cake ?

      I know this is late, but probably not. She didn't temper it, so it wouldn't set hard enough to peel off the paper. If you tempered it, you definitely could, but not with this technique.

      You practice on the paper/boards until you're comfortable before doing it on the cake. If you are doing thicker decorations like an xmas tree or something then freeze it to parchment paper and when frozen, use a flat spatula to carefully remove and transfer. Bakers will make a few to freeze incase 1 breaks...

      Well if you buy cheap chocolate the quality perhaps wont look good but as long as you melt the chocolate probably it should be ok

      This is couverture chocolate - but any dark chocolate works well for writing!

    I watched a le cordon bleu vid, you can cut straight across the top for easier flow of chocolate not at an angle.

      she said she's using semi dark chocolate so any chocolate that is 50-60% is good. hope this helps!
