Don't know about pink on one side, but I'll definitely give it a try.

Thats a regular burger just with extremely thin pattys.
A smashburger has no formed pattys. The flesh is just balled up and then smashed onto the hot griddle to flatten it out and create the burger

I cut pretzel buns with a butter knife
Dumb not to flip....and way too thin when there are holes in the patties.....real smash burgers have the charred crispness on each side
My guess is that the extreme thinness is what allows him not to flip, the meat gets cooked extremely fast and flipping isn't necessary and might even burn the meat. At that thickness it's probably tastier to not everything charred but rather have one side crispy and the other softer and pink.
