Story time. As a child, my steak was well done with A1 sauce. I didn't know anything different until I was 22 years old. Went to a company function in my honor. Fancy restaurant. I took my wife, as you do. The only option was chicken or steak for the meal. We both picked steak. When it arrived, we cut into it and noticed it was red, what we presumed to be uncooked. We looked around and noticed everyone just eating it up, so we gave it ago. It changed my life. I've not ordered steak well done again. I've even ventured into the dark territories of "Pittsburg Blue". My wisdom I'll impart on you... if you find a place that has certified A5 Wagyu, get it medium. If you're a steak person, like myself these days, you'll be tempted to order rare. DO NOT DO THIS. Wagyu is meant to be served medium. Medium rare at best.
The way you cook a steak is based on the cut. Some cuts you do well done because theyre cheaper cuts that need more cooking to get at all tender. Most are better at medium rare to rare.
Oh yeah, I have turned everyone I know onto rare meat. If you find a place that grinds beef in house every day then it's actually safe to eat that rare too. One bite and you'll want to go punch Ronald McDonald in his stupid face. You never knew a burger could be so good. Make sure it was ground that day though. E-coli is no joke

I’ve had A5 Wagyu before, and I had no idea. My dad is an amazing chef, and one night he made two steaks, then asked me which I liked better. The one I liked better was of course the secret wagyu, and I ate some more.
It looks a lot fattier uncooked than it actually is when you cook it and eat it. You don't taste the fat like you would a steak in the west. The fat melts into the meat and just improves the overall flavor.
My husband and I had two different steaks when at a restaurant in Kobe, Japan in 2019. They were just magical. We still talk about it today about how delicious and perfect they were. Worth every penny!
Did a trip to Tokyo in 2016 with, my now, wife. Got a chance to try Wagyu, paid $50 for a little piece each but the taste was unbelievable. My wife is a stickler with money and she said it was worth every penny. I didn't wanna stop chewing lol
I’ve had A5 Miyazaki before and cooked it at home. It’s like no other steak in the world. Small portion is enough anyway since it’s so fatty and fills you up. Also healthy for its omega 3s and 6s. It’s meat that melts in your mouth! All you need is a dash a salt. Australia has amazing Wagyu steaks as well! When I want a good steak I’ll go for Australian Wagyu.
There is a reason for that. The meat has so much fat, while it rests before cutting, the fat starts to soak into the bread, giving it a nice, meaty flavor. It sounded insane, but it is a treat you'll never forget.
similar story in Australia, the most prized meat is called either a "bunnings snag" or a "democracy sausage". In both cases it's a cheap, supermarket sausage, cooked by volunteers, fundraising for organisations like the scouts or local schools, then thrown onto a piece of white bread, with some onions & tomato sauce. People will travel for miles just to get a bunnings snag. In covid, they even set up mobile vaccination clinics nest to the snag stall when vaccine numbers stagnated & got a massive increase because of location lol. Bunnings is an Aussie hardware store brand & the sausages are cooked in it's carparks on Saturdays & Sundays lunch time. "Democracy sausages" are a rarer beast & even more prized, being only available at polling booths during elections, therefore ensuring everyone turns up to vote, so that they can buy their "democracy sausage". No deep frying with either, but you can get butter lathered onto the bread & so covering the sausage too :) Ok, so we don't charge a fortune for these in the way wagyu does, but most Aussies would automatically choose the bunnings snag over a wagyu if offered both

It's partly frozen to make it easier to handle and cut. Fully thawed wagyu is so delicate it would simply smush if you tried to cut it like regular meat.
It’s because there’s so much intramuscular fat. The meat is chilled, and cold fat has the consistency of wax. It’s very hard to cut while cold, but if completely thawed, it would be extremely easy.

Born in Miyazaki, now living in Kobe. I prefer Aussie beef(mostly because I can't afford wagyu, and can't take too much fat) I think wagyu tastes better when eaten with just salt and pepper, but if you eat steaks because you love experimenting with sauces, Aussie beef is perfect for me. This is just my preference. IDK if I was rich, I might change my opinion.
3:11 Fun fact: In the past few Wagyu Olypmics where Miyazaki beef won two championships, the 3 traditional juggernauts of Wagyu, Matsusaka, Kobe, and Omi, only sent one cow each to the competition, while Miyazaki and other prefectures sent upwards of 50 each.

"tightly regulated to protect the value and quality of the meat" "to protect the value and the quality of the meat" "to protect the value" There's your answer.
@Sassy The Sasquatch depends on your hygiene. but consider this, the bread we have today with white flour was only eaten by the really rich back in ye olde times. it was considered a huge luxury, then we figured out how to mass produce it, and white flour is sold by the 5-20 pound bag. now imagine if kobe beef production wasn't kept so tightly held. better feed that produced better marbling would be researched and produced, people would experiment with the cow breeding to make better kobe style cows, and eventually mass production of said cows would be possible. the quality would not drop, rather, kobe quality would become the new floor for quality, and it would only get better from there. kobe beef production is like diamonds. the breeds/mines are held by 1 or 2 small groups that create artificial scarcity to drive the price waaaaaaay up.
@@Thejigholeman Nah nowadays waygu is raised everywhere. The problem is people wouldn't really buy it in mass. After all it's very very fatty and because of that you can only eat smart portions (and it isn't really that good...)
“To protect the value and quality of meat” ...because Brits, Americans, and Australians are trying to crossbreed wagyu with domestic livestock and slapping on the wagyu name to every burger, beef nugget, and steak on their menus to jack up the prices and rip off their customers. So yeah, japan should regulate and protect the value and quality. Ever heard of caviar and other high end ingredients?
@@Thejigholeman No because they don't overproduce wagyu. The demand is small and so the supply is small. Currently wagyu is a total ripoff... but most fancy foods are
You should think that Japanese Wagyu and wagyu are different things. Basically, wagyu sold overseas is from Australia and the United States. its not something i would recommend adding to your weekly grocery list. But it is worth the money for special occasions. You don't necessarily eat a whole steak per person. There are many ways to implement the meat into other dishes, which makes one or two steaks enough to feed a family of 4 or 5. Its definitely worth it and i would recommend trying it at least once. I was skeptical when i was introduced to this meat during one of my trips to Japan. I now eat it at least once a year, there are export sites where you can have it shipped to your home. Live a little bit, you will be very pleased with your decision
They listen to mozart every sunday while getting a foot spa, get complimented 24/7 for being "fatty" eats only artisan grass grown by men with a man bun
Like already mentioned in the comments, if you buy it yourself and cook at home it's cheaper. I eat wagyu beef like once every 2 weeks and it's definitely worth the price because it's so good. When you go back to other kinds of beef, it just won't cut it for you.
Probably they want to use it for sukiyaki , Yakiniku So they need it to cut it very thin, they must be put the meat into freezer first because it's easier to cut after the meat firm
I don't think wagyu will cost less. I think it's made its mark as a product that knows how much its worth; and with the rise of beef prices in general its highly unlikely that the price of a gourmet beef product would go down. The price difference may get better though

Ultra rare it is then, go red or go home
@@raven0ak No thanks. I still like my hot food, hot.
The way you cook a steak is based on the cut. Some cuts you do well done because theyre cheaper cuts that need more cooking to get at all tender. Most are better at medium rare to rare.
Nah mang. i will eat it live! fking stupind thing. I eat it LIVE!

Crazy how the most prized and expensive beef in the world is best enjoyed breaded and deep fried between two pieces of toast.
Gordan ramsay is quaking
There is a reason for that. The meat has so much fat, while it rests before cutting, the fat starts to soak into the bread, giving it a nice, meaty flavor. It sounded insane, but it is a treat you'll never forget.
It seemed like a waste of such an expensive product. Weird!
similar story in Australia, the most prized meat is called either a "bunnings snag" or a "democracy sausage". No deep frying with either, but you can get butter lathered onto the bread & so covering the sausage too :)
Ok, so we don't charge a fortune for these in the way wagyu does, but most Aussies would automatically choose the bunnings snag over a wagyu if offered both

It isn't cooked, cooking relaxes connective tissue.
It's partly frozen to make it easier to handle and cut. Fully thawed wagyu is so delicate it would simply smush if you tried to cut it like regular meat.

It’s because there’s so much intramuscular fat. The meat is chilled, and cold fat has the consistency of wax. It’s very hard to cut while cold, but if completely thawed, it would be extremely easy.

but consider this, the bread we have today with white flour was only eaten by the really rich back in ye olde times. it was considered a huge luxury, then we figured out how to mass produce it, and white flour is sold by the 5-20 pound bag.
now imagine if kobe beef production wasn't kept so tightly held.
better feed that produced better marbling would be researched and produced, people would experiment with the cow breeding to make better kobe style cows, and eventually mass production of said cows would be possible.
the quality would not drop, rather, kobe quality would become the new floor for quality, and it would only get better from there.
kobe beef production is like diamonds.
the breeds/mines are held by 1 or 2 small groups that create artificial scarcity to drive the price waaaaaaay up.
