what wood for a barrel you would love to try. thats not done befor? not totaly sure how it works on a sciense level.
like what about a coconut wood or redwood tree
There’s definitely some distilleries who have played about with this - I’ve seen some native Australian wood used like jarrah and red gum, usually just as a finish, but that’s cool! That’s what’s fun about the Australian industry, it’s less heavily regulated so they can play around - Scotch, on the other hand, has to be oak barrels.

Tasmania whiskey? Never would have thought it.
There’s heaps of distilleries there! It’s like a mini Scotland haha, the weather is cooler there than elsewhere in Australia so good ageing weather. Bill Lark, of Lark distillery in Tasmania is often called the Godfather of Australian whisky as it was him who got an old law prohibiting smaller distilleries on Tasmania repealed, and Lark and Sullivans were the first two distilleries built after that, 30 odd years ago, and they put Australian whisky on the map especially when Sullivans Cove won world’s best single malt at the world whisky awards in 2014.
One bottle of this whisky is upwards of $500 US dollars.
For some of the releases yeah, but I do think that the care and quality shows. Everyone is obviously going to have their own guideline on what is worth it for them!

She’s literally on the distillery sensory panel, she has tasted that whisky tens if not hundreds of times! It’s hard to say everything you want to say and drink at the same time, I can tell you from experience haha.
