Therefore the fact they aren't wearing gloves in many cases mean the end product is less contaminated. So yeah, there are many reasons not to wear any gloves and these are only some of them.

No. If you ever ask a health inspector what they think of people using gloves, they immediately say that don't want people to. People wearing gloves never change them enough, and don't change their gloves as frequently as they'd wash their hands.
All these workers stick their body parts in the cheese. Who knows where those hands were just before getting immersed in the cheese? They do not wear anything to prevent their bodyhairs and other crap on their bodies and clothing from falling in the cheese. I like the cheese but this is quite disgusting. Where are their “ministero della sanita’”?

Gloves are not a magic thing. There is nothing wrong to make food with bare hands if they are kept clean. The watches the workers wear while making cheese in this video are actually what to be concerned here. You can wash your hands with soap usually but it's very likely that you would never wash your watch, and there is loads of bacteria there.
