Bring water to a complete boil and when you pour flour, let it bubble before you start mashing/ mixing. Also use a heavy or thick saucepan or pot, don't use none stick pot/saucepan because it releases the crust bottom part of the ugali into the ugali in the process of mashing or mixing as seen in the video. Also, when you pour enough flour in the beginning, there won't be as many lumps to mash out. Incase the flour happens to be too much than needed making ugali to be tough or coarse, don't add cold water, add complete boiled water for better results. Adding cold water in the middle makes ugali test raw not pleasant to eat. And after mashing all the lumps, cover the ugali and let it steam as you turn it occassionally so that it cooks through. Ugali needs time to steam before its served. The longer it steams the tastier it becomes. It can't be served right after mashing off flour, it will test floury and some times bitter . Ugali needs to be cooked starting with high heat to medium and as it steam s covered. You also want to make softer
because ugali hardens as it cools.
You are a legend..been making ugali using non stick pots since I moved overseas and it's never turned out like the proper thing but after reading this I got a proper pot and guess what am eating now? proper African ugali👍

Thumbs up. We are together on cooking ugali with very high heat after the water is boiling and the unga starts to bubble. Yes, this iswhere many miss the tasty ugali. Ugali baking is high heat. And actually when you do this and keep mashing over again, 10 to 15 minutes are enough to serve it. The ugalis that taste cold(raw) and floury are disgusting.

Great job.
An easier method is to mix the maize with cold water in a bowl, to make a paste. Then add tothe boiling water. After it bubbles slowly add maize. Less lumps less work 😘

One bowl maze take one bowl water. When it comes to boiling add maze mix it. Add some more water and keep it on low flame untill it's cooked

Wow a very interesting insight. I’m from Malawi and if I cooked Ugali that way my mom would kill me. We always have to add maize flour when the water is just starting to warm up, then we add flour until it turns to porridge and let the starch cook up for about 15-20 minutes then add more flour until it thickens. But great video and happy to learn how others are doing it
🤣🤣🤣🤣 Justin you are very funny your mum should just come down😂. Most Kenyans we wait till the water has boiled to add flour. I think ugali is very flexible you can cook it how u want it but make sure the water has boiled and ugali should be thick 😉.
What you cook in Malawi is Nsima which is not Ugali. Same ingredients used by different methods of cooking so final product is different like grilling and roasting meat.
@@khaltsharivist365 Nsima and ugali are the same thing just different names depending on the country. It's maize meal at the end of the day. In Zimbabwe we call it sadza 😂😂😂
@@Yummykitchenchronicles In Zimbabwe we cook it the same was as what was said in this comment. We believe when we live it to simmer/boil its cooking the maize meal properly and after the simmering/boiling process and having added more mealie meal to thicken we live it to simmer again so that the new added maize meal is cooked through properly. However to each their own as long as you are happy with the end result..

It looks like the same flour used to make Tortillas, but it also looks like mashed potatoes
totally tastes different from mashed potatoes but i agree it is next to tortillas in taste

Since it is corn flour I thought the same thing and bought MASECA to try and make it. Did not not work out lol I had to bring back some maiz flour from my trip to Uganda and it turned out amazing!

When we make it, we add the the hot water to the maize flour/kawunga. It makes it easier to mix and you can avoid lumps better

Yes lower alittle bit until u have finished mixing boilling water und flour . After that add the heat to normal

Maize flour and corn flour are the same but they have different texture
Corn flour is very thin and more like wheat flour
While maize flour texture is thick & firm and it does not stick when you cook ugali .

Hiii Patterson : for us we use maize flour. Some they used cassava flour but they are not the same . Because maize flour it’s texture it’s not soft. But for cassava it’s very soft. And another thing with maize flour we chew when eating but for Cassava they swallow it 😂😂😂😂😂 . When they say ugali please use maize flour. Yellow and white all are good

The one I used doesn't have a brand name,I bought my flour in afroshop. I think she buys in big quantities then she repackage in her own bags. If you're looking for the best flour for ugali, Make sure the flour is not finely grided. When if finely grided the ugali will be sticky 😢.

Halo Samia Segero : let me explain 🤗 Ugali is made of maize flour and fufu is made of cassava . Fufu is very popular in Western Africa and Ugali is mostly known in East Africa. 🤗🤗.

Ugali is not seasoned....the magic happens with the stew and greens....ugali on its own is bland which makes the spicy stew and greens the perfect accompaniments....so you don't have to worry about it been plain....when you are eating the full dish you won't even notice

I don't understand, because they always make this food with the pots spilling on the edges. All the videos I've seen so far do like this, it seems that there are no bigger pots in these places.
Just know ugali is messy 😂😂😂 even if the pot is big 😂
You can't cook ugali and expect a clean pot....it doesn't happen
Carlos Silva, I understand Ugali is messy but you can either use a big pot or a smaller quantity of flour. I used to live in Africa, (so my children love Ugali with beans), now in USA. In fact I’m making Ugali today and I don’t do any mess.
