Again, things I used to eat as a kid but never knew how they made it lol. I so appreciate you for reminding me of my childhood. After my mom past recently, I started to miss so much of what she and my abuela and tias use to make during holidays or just randomly. You guys bring me to tears each time. I just miss the quality time we had making this or tamales, guisao, etc. Even when I wasn't involved (by choice mind you) lol. I grew up a mexirican y yo quiero mi gente con mucho amor from both sides because of my infused cultures. Food is life and has always brought our families together. You and your sister continue to show that. Love you both for it. Stay amazing an continue to teach the children! Besitos from my partner and I

My family is from Hermosillo, Sonora. I was taught just slightly differently with the ingredients and how to make as well. My dad didn’t use a casserole dish, he used a big olla and made a few layers. The cheese he said was the secret which separated the good capirotadas from the average ones. My dad used to make it every year during lent growing up. He even taught me the recipe so that I can do it for school for a step to step presentation I had to do in the spring of 8th grade, so that was back in 1986 so that was just about 37 years ago….dang! I’m old. I already had a pot made and just had to demonstrate and describe each step for the class. Everyone had a chance to taste it and then my friends and I ate the whole demo portion too. I checked to see how to make the liquid portion. Se me olvidó. I also don’t recall putting in so many piloncillos, but I could be wrong. ¡Muchísimas gracias!
    Good times!

Hello from Arizona! 🌵🙋🏻‍♀️ My grandma was from Sonora but cooked a bit different version. She used light brown sugar if she couldn’t find Piloncio in the local store for the syrup, she used jack cheese and would butter the birote or even French bread before toasting. She added sliced peeled apples and bananas too so it had more fruit. We usually had this for Easter/Lent as a filler since we wouldn’t be eating meat. This sounds good at anytime of the year though! Thank you for sharing!🙏🏼 You bring back beautiful memories with every dish you prepare.🥰 God Bless you & your family.

We make it on lent every Friday my mom’s receipe is green apple in the syrup and anise and cinnamon sticks. I like it with white cheese but my family likes yellow American cheese. We toasted the bread just like you but she added butter slices and she would cut the green apple and sliced banana only to one side for her and my Dad . And she would serve it for us with vanilla ice cream so we could it. I just add roasted peanuts and nuts white and black raisins let them soak to get plump. Very simple too. We only like it hot so I make a small batch every Friday for lunch or dinner. I still get orders from when I had a Mexican restaurant for lent week for my mom’s capritoda, dulce de frijol , rice pudding.
