I can't tell if you're going into both sides of the same stich or not? (you're thumb keeps covering it, until you move your hook and I miss it)

In the case of this video, I only put the hook in one loop for one stitch. (2:32)
However, this is not a mandatory rule.
In some cases, I may put the hook in both loops of a stitch.
