    Made these last Christmas to accompany a starter of tomato and roasted red pepper soup, together with homemade sesame seed rolls.....delicious!

    So, I might be 3 years late to this party, but, loved the easy ingredients, simple method. I made mine with whole wheat flour & ras el hanout seasoning. So tasty! I found it challenging rolling out super thin with all that super flavourful cheese, but, talk about scoff the lot!

    I have just finished baking a double batch. The smell is so good. They are a bit salty, due to the types of cheese (Pecorino, Parmigiano and a big part of very old Cheddar). I guess next time I'll drop the Parmigiano as this is on the salty side. Pecorino is also salty. In a way, it is better as I can't eat all the crackers at once. Thank you for the recipe!

    After being initially worried about the dangerously high cheese levels I have cracked and decided to have a go at these later on, with a view to giving them a light dusting of black pepper/ garlic powder/ chill/ smoked paprika, before baking.     I love cheese so much, so I was watching you doing many wonderful recipes, but with this one, I think I found my Holy Grail. I have a lot of cheese in my fridge, both hard and soft. I understand hard is much better. I wonder whether Parmigiano reggiano or Pecorino Romano would work. Those are really hard cheese.

      Yes they would work, but I like to use 3 or 4 different cheeses

      Thank you! I also want to mix cheeses. I love Pecorino, but as far as I know sheep vs cow milk cheese, melt differently. Anyway I'll try my best. Thank you so much!

    I made them tonight with my mum and they are the best! We used only Cheddar cheese. You were right, they disappeared almost instantly :D

      If cake flour is like self-raising then I don't think it would work - your crackers would be soft and puffy and not hard and crackery. Surprised you can't get plain AP flour.

      KeefCooks Hi keef actually I live in Japan the translation is not always correct for plain or all purpose flour they write light flour or weak flour. But anyway the cake flour turned out great. I added a little union salt and a little apple cider vinegar and a pinch of mustard. And the crackers were lovely Once again thanks a lot.

      I've no idea - wouldn't it taste almondy? Never used the stuff.

    Grana padano! My favorite. But it loses its crunchy granules when melted, so that's a bit of a waste to bake with it.
    I will probably try it with a sheep's milk cheese like manchego or pecorino.

      I would but I'm in the middle of another project. I'm experimenting with a beef Stroganoff sous vide, made from a tougher cut of meat (chuck). 3 hours down, 21 more to go. :)

    Ooh these look good. I’m not sure my wife will give me permission to make them, we’ve just on the 30th of June celebrated our 40th ruby wedding anniversary. But as my age increases I’ve noticed she keeps stepping in if I look at making such as this.
    Oh of course I could go over her head and just make them anyway but she as a special way of making one feel guilty to the point that it would spoil there flavour. X

      I just want to thank you so much for your videos. My husband is a Stokie and went to Uni in Keele. He has been here in the US with me for 14 years now. I love cooking his favorite things for him and you do them without all the extra fussiness. I even make him mushy peas from dry! Anyway - super chuffed to find you :)
