This segment is 30 minutes too short. I have over 30 years restaurant experience, no issues, I would love to do something like this. May you succeed with this dream.
I grew up in Lamar which is about an hour south of Kit Carson but I went to school in Holly so I can appreciate them not having a place to get a bite to eat. I once got pulled over by the Kit Carson County sheriff I believe this must have been in 2002 for speeding. I was in the Air Force at the time and was stationed up in Cheyenne, WY so we’d drive down to visit family and drive through Kit Carson on Hwy 287. So the sheriff came walking back to my truck and asked me why I had a Colorado DL but Wyoming vehicle plates. I explained to him I was in the Air Force and was heading home after visiting family in Lamar. The sheriff got on to me for not telling him I was a serviceman when he initially pulled me over and literally ripped up the speeding ticket in front of me and my family, shook my hand, thanked me for my military service, told me to slow down and to watch my speed then sent me on my way. I was flabbergasted. Crazy this video just showed up in my RUclips feed. I wish the restaurant and motel much success. I will make a point to stop and get a bite to eat when I visit family in March. I now live in North Pole, Alaska.
My Ex-plative wife moved back to Holly with her Wonderful MOM who had Alzhiemers real bad after we had been together for over twenty years and I have been up there a bunch. Really liked the Old timers but there all gone now. I took my brother through Kit Carson and we stopped at his museum it was an old convience store. It was closed so we just looked through the big glass at all the cool stuff. Theres alot of History up there that needs to be told but the Kids aren't interested in anything but getting out I guess. That Young Man has GUTS I'll give him that. Oh if your ever down to Holly again my ex's name is Jeanne Scott or was. Nice post.
I used to stay at that motel and eat at that cafe. I'm glad to see it opened back up. I will certainly stop at the cafe if I am driving through KC. Best wishes to you guys!

Restaurants are my favorite places to eat when traveling.
My Dad and I ate at Shepps Cafe many times on our travels around Eastern Colorado to and from our home in Lamar.
I spent 2 weeks in Kit Carson one night.
