- This is a recipe video teaching you how to make an ice cream cake using cream, condensed milk and honeycomb chocolate bars. It also demonstrates how to make a stunning rainbow ruffle using whipped cream and a 104 petal tip.

ice cream cake recipe:
600ml thickened cream / regular whipping cream
397ml can of condensed milk
7 snack sized honeycomb bars or cadbury crunchie bars
for the frosting:
600ml thickened cream
1 tsp vanilla extract
2 tablespoons sugar
gel food colours: red, orange, yellow, green, blue and purple
materials needed:
-104 petal tip
- 8 inch spring form pan or pan with removable side
- 10 inch cake board
- disposable piping bag

+Danietta Lucas Hi Danietta, thank you so much :) that's so exciting! how long to go before you finish your course? Buttercreaam when placed in the freezer I find tends to collect the moisture. When you take it out of the freezer if it's been in the freeze over night or for a few hours, droplets will start to form and the colours may bleed. Plus I get the feeling buttercream might not compliment the taste very well as cream is more subtle and breaks up the sweetness of the ice cream cake. thats my own personal opinion though! You could definitely give it a shot and see if it works for you and your prreferences :)

OK, how did you get the ruffles to blend from one to another? Did you put 2 colors in one bag or something? I couldn't tell by looking if you were using one bag and just adding the next color in line or switching between bags. Beautiful cake, though!

that's awesome. What would you recommend for a boys birthday party? rainbow colored flower like in the video, just a little rainbow frosting or a frosting with only one color? and how should i place it on the cake?
Hi +Kristina Thomsen, how old is the boy? If he is aged 6 and below I think they would love a rainbow related cake. Any older and maybe a cake with two colours. You might do a ring of one colour, then the 2nd ring another colour and keep alternating maybe? If you want to decorate off the cake, I would suggest piping decorations on baking paper and then freezing them. Once they're frozen you can pick them right up and place them wherever you like :) Whipped cream like in this video will freeze / harden nicely, but you will want to work with it reallly quickly. It turns soft again in no time.

Hi! I am wondering if the cake will hold out in a tropical climate. As in while decorating. Would love to try this!
Hi +Maeve Li, if it's really warm I would say you would probably have to do a few trips in and out of the freezer. However it's not like regular ice cream where it would melt into complete liquid. It would take a tad bit longer to do so as the cream is whipped and so it has a thicker consistency at room temp, giving you more time to decorate :) but I would probably still put it into the freezer in between decorating

Hi , won’t there be a layer of ice/ frost on the ice cream cake when we put it in the freezer overnight before decorating it?
Hi hun, It would depend on your freezer. You can always cover the cake completely with a box. The box will develop the frost and not the cake.

Hey! I noticed that your truffle have two colours at the end e.g yellow and blue. How did you do that?
Instead of washing the bag or using multiple bags, she just put the two colors in one. Something like two-tone but they're still separate; one color at the bottom of the bag, and another on top.
