    In this video i'll explain how to surprise your guests with the best Afghan bolani. Very tasteful and only fresh ingredients!

    Ingredients:
    For Dough:
    500 gram flour
    4 gram yeast
    10 gram salt
    1 tsp kurkuma
    20 ml sunflower oil
    250 ml water
    Fillings:
    100 gram leeks
    15 gram garlic
    50 gram green chili pepper
    300 gram pumpkin
    125 gram onions
    25 gram red chili pepper
    10 gram salt
    Method:
    Preparing Dough:
    Sieve the flour, salt and kurkuma on to a clean work surface and make a well in the middle.
    In a cup, mix the yeast into 10 ml of lukewarm water and leave for a few minutes, then pour into the well.
    Satrt mixing careful the yeast and add water in 3 times.
    Place the ball of dough in a large flour-dusted bowl and flour the top of it. Co ver the bowl with a aluminium foil and place in a warm room for about an hour.
    Cut the dough into same pieces and form round balls
    Place the balls of dough n a large flour-dusted bowl and flour the top of it. Co ver the bowl with a aluminium foil and place in a warm room for about 30 minutes.
    Roll the dough out into rough circles , about 4 mm thick and place them on a flour dusted plate.
    Then fill the half of the circle with leek or pumpkin and wrap them tightly.
    Preparing the fillings:
    Cut the leeks into small slices and finely grate the pumpkin. Store them separate in to a bowl
    Cut the green and red chilipepper, onions into small cubes.
    Leeks: Add in green pepper, half of salt, garlic and oil. Mix well
    Pumpkin: Add in red chilipepper, onions and half of salt, garlic and oil. Mix well
    Now you are ready to fill the Bolani.
    Frying:
    On a medium fire heat the pan
    Then add oil into the pan
    When the oil is hot then add the bolani into the pan
    Fry them on both sides golden brown
    Put them on a plate and serve!!
    On the side you can add yoghurt with dried mint and chakny ( fresh coriander, green pepper, salt, lemon juice)
