Lemon Pepper Chicken Thighs

- Chicken Thighs
- Garlic powder
- Onion Powder
- Paprika
- Lemon Pepper Seasoning
- Pepper
- Parsley
- Butter
- Lemons
Mashed Taters
-All purpose potatoes peeled and cubed
-Cover with 1 inch cold water, with salt and chicken bullion addded
-simmer until very tender
-drain water and set pot over low heat
-add at least 1 stick of butter and a little light cream or milk
-Mash aggressively with a hand masher
-Add more butter, chicken bouillon powder and cream
-whip with a power mixer
-Keep adding cream and butter while whipping until they are light, fluffy and very smooth
-Last add pepper just until you can see it in the potatoes. If you can't see it add more. If you can than you have added enough.

Looks good! Just a suggestion for more crispy skin since you went to the trouble to pull it back! Scrape the underside with a knife. You probably know that. Just my 2 cents. Great job as always!

Have you ever tried doing thighs skin down on a cold, un-oiled griddle? If you cook it about 90% of the way on the skin side, then finish on the other side while basting, the skin turns out impossibly crispy. Anyway just throwing it out there, but those plates look delicious. Thanks guys
Gentlemen, great video. The technique I use for crispy skin is to peel back the skin, and then scrape the subcutaneous fat layer off the underside. Works awesome. Have a great summer guys.
