Liquid is not important. Correct temperature is. Just cook it 68 deg. C and let it rest.

@@ButcherBox did it last night and I would say that without skin or bone there is less fat coming off the chicken. So it's best to add some chicken stock when you add the carrots & de-glaze. Otherwise you could end up burning the quinoa. It is very voluminous!

Buy yourself an instant read thermometer like his and cook it to 165F for chicken breast or 175F if it's chicken thigh. That way you dont have to worry about time, the thermometer will tell you when it's ready :)

How did it turn out?
Just cooked this with a little twist and it was so good! After browning the chicken I added the chicken stock, lemon juice and butter... But also added garlic and thyme. After cooking the chicken an reducing the liquid to a sauce I topped the chicken with lemon zest from the lemons I squeezed. Bursting with flavor! Love cooking it's such an art

@@jj-vf7wm In that case you would have to change the technique (no oven required): Quickly brown the chicken slices in a very hot pan until almost done, take them out onto a plate, use the pan to make the sauce as shown and let it reduce, then add the chicken slices with their juice to the sauce and let them simmer just until fully cooked. Make sure not to overcook them or they'll go dry.
I tried this so many times and it always turned good. My husband and son love them.. thank you for the recipe, handsome!

Omg I don’t have the iron skillet so I transferred my sauce and seared chicken to a glass oven dish and turned up the heat to 350 degrees F and this was the best chicken breast I have ever had!!! Thank you!!!

I just followed this to a T, down to the slicing, the little lady was super impressed, the reduction was loaded with flavor, I wish I knew how much stock to use. I think I used too much. The reduction kinda took a while. But still great video
for 3 breasts in a 10in cast iron i'd go about 1/2 to 3/4 cup of stock
Most recipes call for 1 cup.

I made this chicken, and used beer instead of the chicken stock. Also, before putting it in the oven I added herbs de Provence. It came out delicious. We loved it!!! It’s perfect to add to a salad. Thank you so much for the recipe. It’s definitively a keeper.

I’m making this with 10 pieces of chicken. I have to feed a family of 5 and have left overs for work. I put them in a casserole and I hope it works out! The first time I did it, it was with 4 pieces and it came out delish! So .... I hope it’s the same the second time!

Hey, what would be your recommendation for using thin sliced chicken breast. I find I have better luck with cooking those evenly than regular chicken breast (which almost always come out dry 😂). Thanks in advance!
I wanted to try this but I didn't have chicken stock and I was trying to avoid going to the store so I used some orange juice instead as it would obviously fit with the citrus theme. I also added a sprig of rosemary to the pan while it baked. This turned out so delicious, this recipe will definitely be a favorite from now on. I plan to try it with chicken stock next time to see what your version is like, and then from there experiment with other liquids and spices. Thank you for the inspiration 🙏

When he's slicing the lemon, that's when every smoke alarm in my condo goes off. I don't have a Zephyr or Wolf range hood. That $15,000 range might help me too... though he doesn't even use the cooktop. The glass one is way easier to clean. This is kind of a big cleanup job after dinner.

Referring to temperature: He says.. "Will you look at that". Ok...WHAT TEMPERATURE IS IT THAT I'M LOOKING AT???? We can't read that thermometer so how about telling us what the temp is.
Ok, this did not work for me at all. Tough, barely able to chew it. Taste was good. Followed exactly. It think the tenderizing was missing. Checked it at 19 mins, not 160, so another 5, 160, let it rest. Nope, very tough.

On your video you clearly said set the oven to 325 but your posted recipe says 375. Which one should I do? Or does it matter? Just cook it longer on lower heat?
Yeek! You just took the thermometer out of the chicken breast & folded it up! You should at least rinse &/or wash it 1st! Otherwise you'll contaminate future foods with dirty thermometer.

Brisseth Romero I cant speak for what he would do, but I’ve cooked chicken similarly and if you put a lid on there, reduce the heat and let it simmer (12-15 min) it’ll probably work out. Try not to open it and let out heat too much. If it looks like you’re losing moisture, just add a little water. Cooking is learned by trying, so just go for it!
