Awwww!! I love hearing that when you say “Bumbi plant” !! For making Bori, you need to soak urad dal overnight. Next day you need to blend the dal to a fine paste with as little water possible. Then with your hand you need to whisk the batter as much possible to incorporate air. I take large pizza pans, apply oil very well and then shape these small boris one at a time on the pan. Next it needs to be sun dried for a few days until they become hard. I make them close to fall when the weather starts getting drier. You can store these in an airtight container for a year. They are delicious but laborious to make. Some Indian stores sell them as well but I like homemade ones.
As a person who can’t eat alliums any more, I love the fact that Bengali niramish food doesn’t use alliums. Yum! Do post more Bengali veg recipes. Thanks!

Hi from which country you are sending that asking to find some ingredients the boring you mentioned called vadi from punjab and available in big Indian hyper market
Yes vadi is available in our Indian super markets as well. The Bengali bori(vadi) gets soft very easily and are bit different from the ones you mentioned

You surely can use spinach, but have you tried malabar spinach? Tastes so delicious. It is available more during monsoon time in India

I love okra, sadly it’s quite hard to get here in Germany (at least without driving somewhere)
Have you tried growing them? I grow them in containers during summer. Requires very less attention

Apparently can purchase ready made urad dal bori in a packet!
Yes you can get it at some Indian grocery stores but sometimes they are not as good
