That’s so clever how you stick the dowels in and then lift them up to cut…back when I made cakes, I wasn’t that smart and just cut mine the length I thought they were suppose to be and crossed my fingers! I wasn’t a professional by any means. My sister volunteered me to make her daughter’s wedding cake because she couldn’t find a cake maker to do one like she wanted where they lived….and I’d never decorated cakes before! I taught myself and practiced a lot. Baked cake here then frozen and drove 500 miles to their home where I decorated the day before and day of wedding. Carried boxes and boxes of Royal icing roses with me then did the traditional piping, ruffles and columns around the three tiers…was nearly late to the wedding as I set things up at venue 15 miles from wedding. Oh she wanted the cake to match her bouquet which was one featured on a BridesMagazine with fall flowers in fall colors… when I got to the wedding I was all kinds of torqued when I saw her bouquet… all in pastel roses! No autumn flowers or colors! 😂😂😂. The cake was beautiful and delicious and well received… I made a few more wedding cakes as gifts for friends but never again. I tell people I’m bad luck, all but one couple I’ve made cakes for have divorced! 😂😂😂

That is such a handy little tip about how you apply the sprinkles with a little bit of buttercream on your finger! Such an easy, simple idea that I would never have thought of ;) The cake is absolutely beautiful :)

It’s very popular here in aus. It’s a full flavoured denser type cake and doesn’t rely on sugar syrups or creams for moisture. Very firm when chilled but softens at room tempt. The batter uses melted butter and chocolate and is a pourable consistency too! We are actually releasing our recipes soon so keep an eye out! 🥰
I have been doing cakes for years, I never bothered with a crumb coat, I just go for it. I also never chill my cakes to firm up the cake and or the icing. Everyone is different! Your cake is very pretty. Good job! Stacking tip, get some strong drinking straws, use them for your dowels, no worry about wood splinters or contributing any odd taste transfer.

How much gap do you have between the edge of the cakes and the outside edge of the cake board? In other words, how thick is the buttercream on the sides of the cakes. Do you trim your cake sides?
My brother-in-law was given the job of taking my wedding cake to the venue. And he dropped it. I had no idea, on the day!!! A lady in the kitchen put it back together and rearrange the flowers to hide the damage, I think she found some more flowers too. When I saw the cake I thought it looked different than what we had agreed on but still loved it. I was told a few months afterwards, all was forgiven easily because I didn't know what had happened at the time. All's well that ends well but I totally get the fear in transporting a finished cake to the venue.

You may be at risk for a very serious lawsuit. I love your work and your energy and do not want to see anything negative happen to you.
