You ever cook in your drum without the baffle plate?

Yep, all the time, works fine but you do get temperature swings

Great video. I have a WSM 22.5 which has same grate size as the 55 gallon UDS. Have ever tried to fabricate a drip pan that takes the grease outside of the cooker into a hanging drip bucket. As a customer we would just have drill a hole for the tube go through. Look at the Grilla OG drip pan for reference.. Between all to the UDS and WSM owners out there , their may be a market for this. I would buy one.

Good explanation. Def prefer top lighting as well.
    1. What is the value of the insulator? Protect the life of drum? Or gives more stable temps? Or?
    2. How is the basket getting air given the insulator? From the top? Is that better than the traditional method of air holes at bottom?
    Appreciate the channel,

any tips for high wind 15 mph on this drum smoker?

I usually open the side that is against the wind and that way it doesn’t deal with the wind as much but with the Super 55 I’ve designed it so that wind really doesn’t affect it to much. It has a shield and baffle plate designed to hold temps very well. Thanks for watching
