Interesting vampire theory. My theory is that vampires like garlic just like we do. They managed to convince humans to protect themselves with it, just so they taste better.

Brad and the animations always sync up so well. Sometimes he just stops talking and stares off frame... It's almost like he's really seeing that stuff, they're just editing it back in so we ALSO experience his ali-sanity.
Every time brad pauses speaking for no reason I think he’s seeing King Kong out the window and after processing the scene he just accepts it and goes back to cooking.
That's excellent. I am almost hesitant to see what it is he is looking at and the fact that we don't see it turns up the tension.

@@soundninja99 gabby was a test kitchen assistant, and she now manages the place! Brad I think is focusing more on media production of the shows that he made successful rather than managing the Test Kitchen, so I think it was a mutual decision, and more of a lateral move.

In my head, Brad's back story is that he was a Dukes of Hazzard type moonshiner, and then one day someone told him that you could ferment stuff other than cereal mash. He's been in a kitchen ever since.
I finally realize why I like brads energy so much , he really reminds me of my older brother, the way my brother talks and is so crazy but so calm and funny sometimes... I'm watching all brads videos now since my brother passed away few weeks ago,, I'm finding comfort in the personality.

I've mixed about 6-8 cloves of black garlic with a basic bechamel and used it as a pizza sauce, black garlic pizza sauce with some figs, basil and caramelized onions. Simply divine!

My garlic hypothesis is that garlic is a blood thinner and stops the vampire from digesting blood.
But if the blood is thinner, that just makes it easier for a vampire to bite you and drink it. A vampire could still digest the blood. I can't believe I'm conjecturing about this.

And my goodness, what an elaborate recipe it was! 😛 (1) Dampen garlic bulbs with sake or water, (2) lightly vacuum seal, (3) leave in dehydrator at 130-140 degrees F for 6-8 weeks.

I'm pretty sure that Brad will never get fired because his personality is what makes the content that people keep clicking on. It's literally impossible for BA to replace him. AND if he ever did get fired, I'm sure Brad would just start his own channel. And finally, the BA kitchen team (at least portrayed on camera) and even the production team have a thing about them that is so positively family like. So I don't think he's going anywhere

We grow hundreds of pounds of garlic every year and I once made a LOT of black garlic by accident by forgetting about a pile of garlic in the corner of the drying barn. I did not eat any of it but it was beautiful.

Rice cooker on "keep hot" setting. Wrap them in foil with some drops of water. Put them there for 10/11 days. Take them out and it's perfect black garlic. Same result, much cheaper and much faster

@@m1g4s any idea on what temp your rice cooker is at on keep hot? does it have a humidity control on that setting or is it just dry heat?
@@michaelhall5429 about 65C if i'm not mistaken. and it's just dry heat, but the foil and the lid help with humidity control. If your lid doesn't have a tight grip, wrap the whole rice cooker in plastic film

The Excalibur dehydrators are amazing! I use mine all the time and it’s wonderful! But I can’t imagine running it for two months! My hydro bill would be insane! Also the editing on these videos totally make it. You guys are hilarious!

Bon Appetit is a big enough channel that'd I'd like to request someone do the translations for subtitles. The auto-generated ones are trash and are moderately helpful for the hearing impaired and I think the channel would be more accessible with more accurate subtitling :)

@@Rekateer That's not what they mean, I assume. I think they're referring to the CC stuff. No changes to any actual editing in the video or anything like that, just optional subtitles that people with hearing difficulties can use to understand the video.
I would happily write up a transcript for a few of their shows. I'll have to look when I'm on my computer if they allow someone to add the transcript.
unfortunately they don't allow people to add a transcript. Hopefully they'll start to soon! I'd happily do it for them I love this show and it'd be wonderful to be able to include those who have trouble hearing or are unable to.
