Amazing.. Its the first time I see a non Lebanese/Syrian.. Doing the same we do.. Nice recipe we just normally don't put cumin (it changes the taste) and you can make the shell more dry (it will be easier for forming and holding itself) Bravo and thanks

Nice kibbi nayyi...too..check it out..which is raw meat ...or kibbi bil saniyi ...meaning kibbi flattened in the oven ...cooked .yummie also...also you can do kibbi bi labniyi..or soup based kibbi with hot yogurt dry mint soup .....great for a snowy day lol...comfort food
So, I bought that exact grinder from The Sausage Maker, and also ordered a 1/2" and 3/4" plate, as well as the fine and coarse sharpening kits. It turns out, that the extra accessories I purchased, even though being #12, don't work with the grinder, because the grinder uses plates that have lugs, whereas the standard #12 plates require the grinder to have a lug to locate them. So I spent a good $45 on plates and accessories that I can't use.
Just made this, but used too fatty a ground beef and should've strained more water out of the bulgur too. So I had to squeeze the hell out of the beef in a cloth to get it to become a paste in the blender, then had to squeeze the bulgur/meat mixture after that even more cuz it was too wet. Would not recommend 🤣this is my favorite Arab food and surprisingly not many restaurants have it so I wanted to try making it myself. After literally hours of work the end result was delicious but I think I'll just stick buying it at restaurants from now on

We do the same, and we do not discard bulgur-water just add water and cover for 30-40 mins then knead
I used that attachment to put string cheese inside some Italian sausage.

Do a short on the difference in types of heat/stoves. Gas, Electric for example. Do they change the flavor?
Tips for using one over the other?
Between gas a nf eléctrico stoves there is no difference in flavour... With an electric stove You could/should have better temp control.

I'm interested in making this dish.... any suggestions to substituting the pine nuts out... family member allergy concern.
You can add walnuts or simply omit them.
