    I see Mark is using the awesome Kiwi knife (made in Thailand, not NZ, btw...). I've been using these for about 20 years. When I worked in kitchens I used to bring my own as I found the Kiwi superior as a general utility knife to big-name brands costing many times as much.

    I lived in Thailand for 26 years. Now in Canada. Your videos is my way to connect back to the wonderful street side foods of Bangkok. I am an engineer by profession but I share the passion for food the way you do. I cannot forget after a long hard work day, stopping over at some Isan join on Pratunam or Sukhumvit 38 and having some spicy nua nam tok and som tam lao with stick rice and sweating out all the stress of the day! Have you been to the Thai Muslim joints on Rama 9 road, Kai Yang Jeripan? Your video on the lobster in hua hin had me dreaming for days! Man I wanted to take my next flight to Hua Hin and devour those lobsters! I really love the way you do not compromise on the authenticity of the food. Oh next time you ever go to India, make sure you go to New Delhi and try out Kareems Restaurant . There is one joint in Old Delhi in the Mina Bazaar road opposite of the grand mosque called Aslams Chicken! This guy only sells one item, there is no name for it. Its off the hook! Its a buttery (a entire block of butter) chicken roasted tikka mix salad with herbs and spices and vegetable like onions, radish, cilantro. Also make sure to try Haji Nura Nihari on Hindu Rao Road, you never eaten anything like this. It is a Beef Nihari, google it. Out of bounds! The beef is so so so soft and chocolaty and you eat with super fluffy soft nan bread.

    Thanks for the video. My mexican coworker loves som tam but does not know how to make it. I emailed this video to her today and I also stopped by the asian supermarket to buy her a green papaya. Hopefully she will learn how to make it for herself and her philippino husband who had never liked Lao style papaya salad until oneday I made Thai style for him to try. Now he loves it.

    Im from Brazil and I discovered the wonders of Thai food while traveling Europe in 2015. It was a life changing experience.
    As a matter of fact, my first dinner in Germany was Thai food, and my German friends told me there was this delicious green papaya salad to order at the place. I was skeptical bacause
    In northern Brazil, where I live, green papaya is used only to make sweet jams. Damn. It was delicious, spicy, refreshing.
    Today I eat it everytime I have the opportunity to get green papayas

    Papaya salad is very hard to make taste great if you don't have the skills to mix right amount of spices or ingredients. I know cuz I have tried but always fail to make it taste delicious & I have tasted other vendors mixes too and it is sometimes difficult to find the person that can make great papaya salad. But once you find that person...he/she has you as a customer for life... Love papaya on a hot summer day!

    I love papaya salad! I like to add the sauce afterward to avoid splashes but I make the Lao version and it tastes just as good

    Yes I did! I have been following Thai recipes cooking for 8-9 years now but have never tried this salad before. And I've been wanting to try this salad for years now and I wasn't disappointed at all. I would love to prepare it at home but green papaya are hard to come by here.
    It seems you travel a lot. Let me know if you come to Japan let me know

    To make this vegan/vegetarian: replace fish sauce with golden mountain sauce (you need a bit more as it is not as salty) and a dash of thai soy bean paste to give it a bit of funk. Taste as funky as the real fish sauce thingy.

    Have you ever tried Laos Papaya Salad, where you add Tamarind sauce, Shrimp Paste, and Crab paste to everything you used? It taste really yummy.

      Yes, the Lao papaya salad is so much better. But I think the thai version would suit people that are not into stinky ingredients, lol

    I don't happen to make it this way but some of my relatives do make it this way. I usually start with the peppers, salt and garlic then add papaya, sugar, tamarind sauce, crab paste, shrimp paste, lime,peanuts or peanut butter, fish sauce..Damn, I'm salivating just thinking about it.

    Another excellent vid Mark. I'm eating more cabbage as I'm trying to loose weight. But eating it raw is a little hard core. I like it blanched slightly or stir fried with very little oil. But I'll try it in a salad combo like that and see. I have to buy a mortar and pestal now to try some of these Thai recipes... lol

    I used honey as palm sugar substitute, it turns out to be also great choice, with appropriate ratio of honey to fish sauce and lime juice , you can still get honey flavor in one bite

      Papaya salad is a very popular dish for a few ethnic groups in SE Asia
      Everyone makes it slightly different though. Mark's version is a little too light looking. Usually Asians like to use a little more ingredients such as shrimp or crab paste, and make it a little darker looking. It's one of the most delicious food 😊

      Bcuz some ppl like to eat it sweet and some sour, and some ppl eat it extremely spicy and some only mild
