    next time bring a ice chest with dry ice. as soon as you bleed the trout throw it in the ice chest and it will freeze pretty fast. i used to buy raw salmon fillets from costco and would freeze them in my freezer at -20 C for 24 hours. thaw them and they're ready for sashimi

    Sushi grade fish has been previously frozen to kill the parasites. Especially in fresh water fish which are know to have more parasites. Also try cutting the fish head off then sliding the filet knife in between the ribs by the spine and just slide up following the ribs.
