I used to work for a Russian chef. He used to prepare peljmeni as Tatyana does. But sometimes he used to deep fry it instead of boiling. The deep fried peljmeni was a great hit.

I've made these with my Russian friend before but with her recipe from her mother. The main difference is she puts celery, carrot, cabbage and dill into the mix. Its always delicious
My wife cooks them with a few chicken cubes in the cooking water... I'm not sure I heard if you said to boil them until they float... Anyway, you make them and cook them pretty much identical to my wife oh, except we have a pelmini iron where you lay the dough over it, spoon the meat in, then put another sheet of dough over the top, then use a rolling pin and it cuts out maybe 20 at a time. Works real slick. Cuts and seals at the same time!!! Great video! kudos from Texas USA
I tried Chinese dumplings with sour cream. Awesome. That sour cream does something wonderful to dumplings. Pelmini needs to be evangelized ...with sour cream becuz it's that good.

Also with meat you can experiment how you like. There isn't wrong or right recepie for pelmeni. In old Soviet Union's countries you can find many hundred differece pelmeni. I prefer Polish version- pierogi. And 2 eggs are just 2 eggs- no need for user manual.

You can certainly make them with vegetarian fillings. Mashed potatoes with dill and caramelized onions is a big favorite, as are mushrooms! :)

You can also eat Pelmeni whilst squatting and wearing an Adidas tracksuit for maximum Slav points.
Of course, you can use any filling you like. Cabbage and potatoes are not atypical at all.
Try them with chopped fried tempeh,minced scallions,and tamari.They're hardly Slavic but taste great.

Try adding a little more flour. It should be very soft, but not sticky. I always have extra flour on hand when making these
