DELICIOUS Meat & Cheese Piroshki Recipe!! My Favorite Recipe!

    Say 'hello' to the Russian version of meat pockets - these 'Meat & Cheese Piroshki' are one of my favorite! Soft yeast dough is filled with beef, mozzarella, cheddar and onion, then baked to golden perfection! I prefer to bake my piroshki instead of deep-frying them for a healthier version. I like to use 85% lean ground beef for my piroshki but this recipe will also work great with ground turkey and ground pork. ‎

    Oh my goodness, Tatyana, today I made Prioshki for the first time for my granddaughter who came to visit me from Arizona. She brought me some piroshki from her Russian friend. They were so good, I had to make them. Long story short, I made them this morning and they were outstanding. We really pigged out on them. I topped them with Thai sweet Chile sauce. OMG they were good. She wanted to take all of them home with her. She left me four. But I still love her. THANK YOU SO MUCH FOR YOUR RECIPE. I owe you. Grampa Bill

    Yesss! Being Armenian, I was blessed to have grown up with a lot of Russian and Russian inspired foods so Piroshki takes me wayyyy back. Can't wait to try this baked version :)

    What makes Russian food so good is the dill. So few cuisines use dill a fantastic herb.

    Tatiana, I made your Russian perovskis per video with hamburger and the dill and they were fabulous. So tonight I'm making steak and potato cheese and carrots omitting the hamburger for steak. No deal. However, in this one they are rising for a half hour and then I will be placing them in the oven. Thank you so much! I've had these when I was younger and they were store-bought but they were delicious and have not been able to find them since.       @randelmalavida I was about to type the same comment. I went to Balboa high school in San Francisco from 1984 to 86. Piroshki was one of my favorite foods to buy for lunch. I have been searching this food product for years. The Piroshki was filled with ground beef and a cheese filling. The bread was the best part. Now I can make my own.

    Making these or making pelmeni never fails to bring a family together... Trust me, I had some of my best childhood memories making these with my family. That and making пельмени.

    I was Curious to see how other people make piroshki. My mom (who's from Russia) makes them in a slightly different way but most of the steps are the same. I made it this way and it wasn't all that different, still the same amazing taste. Thanks for sharing this with us.

    very similar to our Lebanese meat pie recipe just no cheese and garlic, just onion peppers and tomato, but i might try this out i love garlic and cheese :)

    Thank you for this recipe! My cousins bubba (grandmother) used to make piroshki for us when we were children, growing up in Australia. She made amazing meals. I have wanted to make this recipe for about a decade. I can still taste that sweet bread 🙂👍

    I'm quite a cook; busy these days but will find time to make. And also will use your recipe to make a deep fried batch and compare. I had this today at a place called "From Russian with Love" in Oregon today, delicious. You are so right about letting them COOL for a substantial amount of time. They're sealed, right?... so they get super hot and you won't taste the flavors until they cool down.

      I'm so glad you're enjoying the recipe! I recommend cooking it first. I have my updated instructions up on the website, where I recommend frying the ground meat first, then using it in the filling. It makes the filling more fluffy :)

    Thank you so much for this wonderful recipe and the easy to follow instruction. I experienced and loved these as a child, but never thought of making them myself until recently. They were a perfect ‘something special’ for a quarantine Easter, and putting them into my Ninja air fryer after baking made them all the more authentic-feeling! Then there was smothering them in sour cream that really took it home. Thanks again!

    Every country has their own version of it ! Originally is Arabic . In Brazil is very popular as well specially in our street-food and the name is Esfirra! Always delicious

    I’m going to try this. My “Boboo” is 93 and can’t remember a lot of recipes. I do have her Russian Molokon cookbook which is nice. I want to learn to make Lapsha. The ladies who always made it are older now or passed and not many of the younger generation learned.

    This brought back childhood memories of the first time I had one. I was in the 5th grade and a boy in my class' mother would always make some for our bake sale. I always made sure to bring $3 on bake sale day, for my 2 piroshkis🥰

    I would brush on egg wash after final proofing to avoid dough sticking to towel. Also, I had a hard time judging amount of filling to add or how big to roll out dough balls. Some of my piroshky exploded in the oven & didn't brown much.

    Never been to the Ukraine but I have a Ukrainian background so when I was growing up my Baba, Mom and Aunt use to make these in the oven....so yummy. My Mom's side were from Poltava/Kharkov area...thanks for sharing your recipe. Im going to make these this weekend.

      @@TatyanasEverydayFood Thank you ! I tried to make them last night and they were really good but my dough was a tad gooey at the end, I think I used too much flour. But I put them back in for about 20 minutes and poked holes in the bread, they were so delicious thank you so much.

    Tatyana, I made this twice so far. The first time I used white flour and the second time I used all wheat flour. I noticed that the wheat completely changed the overall taste by adding a grain-like taste to the dish. Do you stay consistent with white flour or do you alternate with personal consumption/group desire? I like the dill element but is there any comparable substitute you may suggest? I also made a rookie mistake by cooking Piroshki seam side down (the second attempt), it gave it a pastry like visual. I hope many people enjoy your new book as you are #1 in Russian/Ukrainian food!

      Hi! I always stick with white flour for piroshki. If you don't like dill, you could try adding a little bit of parsley.

      Tatyana, keep up the wonderful enthusiasm in your cooking videos. My strategy is to keep making the Meat/Cheese Peroshki inspired by RU as you've demonstrated, until Perfect, then move on to your more varied dishes. :) Thanks again for sharing your happiness.

    Made these a couple of days ago, turned out wonderful. I wonder why though that I couldn't roll my dough into circles with the rolling pin. Had to squish out with my hands because it kept springing back. Was my dough under or over kneaded, proofed or?

    I 'm making this piroshki right now , but I 'm wondering how much mililiters is 1 cup? I live in UK and 1 cup is 250 ml , but in US is 237 ml . Thank you

    Those look good. I always had peroshki were deep fried, however. The ones I bought at the Russian bakery in San Francisco were extremely greasy. Yours look so much better.

    I would just like to start off by saying how wonderful of a cook you are, and how you have changed me from someone who feared setting the house on fire to someone who enjoyed cooking more than anything else.
    Ok, now to my question.
    I am a vegetarian, and I really, really, really want to make this dish. It's looks absolutely delicious, and I don't want to miss out on more amazing piroshki! I've tried your other cabbage piroshki recipe (and it was delicious!) but I also really want to try this one. Any suggestions for what I can use instead of the meat?
    I can always just make some cabbage piroshki again if you can't think of any substitutes, so don't worry if you can't think of anything.

      I'm so glad you enjoy my recipes! :)) The cabbage piroshki are one of my favorites! Have you tried using mushrooms in place of meat? Maybe shitake mushrooms, diced and sauted until golden... I think that might work :)

    I'd love to try these out. Is there any difference by deepfrying or baking them? Or do you just bake them with the meat filling in it?

      You can make these deep fried, too. This baked version is a bit healthier, that's all. If you want to deep fry them, first brown the beef, then combine with the rest of the ingredients

    Interesting you didn’t cook the meat first? I’ve always made the meat first and let it cool and then do the dough and then assemble. Very cool! Great video

    how would you suggest reheating them? will the bread get too tough in the microwave?

    I would actually mix the onion+garlic puree, egg, and the ground meat, then brown them in a pan first. Once browned, I'd let it cool for about 3-4 minutes before placing in a food processor with salt, pepper, and fresh dill.... then pulse until fine. Lastly, I mix in the shredded cheese(s) and stuff the dough with the mixture. Sometimes, if I have some remaining cheese, I simply take a grater with medium-fine shredding teeth/holes to make finer shreds, then drop a few (not too much) on top of the piroshki after brushing them with egg wash. You see, when the cheese caramelizes on the outside, it makes a really nice crust with contrasting texture and color. (Hint: finely-grated cheese browns faster when used as a topping.)

      I actually started doing that, too - browning the meat first. But I brown just the meat, then let it cool and add the rest of the ingredients. Turns out amazing - might need to release an updated version! :)

    Made this today, 8 pieces. Had some problems, wet dough, not enough flour. Had to supplement with some corn flour.
    But they turned out alright. They're very filling. I think 16 smaller ones would be better for me.
