Press the chicken while in the flour with both hands. Shake in basket in a see saw motion 7 times. And then repeat. The 2nd step adds the crispy flakes on the outside
If that's really how it's done, I must say that this is tremendously more efficient than the typical dry wet dry method where each piece is dipped one at a time! Amazing! Thanks for sharing!
I guess your country have different hot and spicy kfc chicken. In malaysia quite the same with india, we dont wash all the spices and chilli marinade and straight into the flour. And thigh bone is already break before marinade process. I guess your place start with dipping in water because to reduce the spiciness.

i can see that you never work in fast food, breading a chicken doesn't need a gloves before they do all of that they sanitize and wash their hand to elbow and you only need to use gloves when your handling ready to eat foods
