    I've just bought a mold, and spent ages looking for a how-to. I don't know why I didn't just search Paul A. Young in the first place. The guy is an absolute legend.

    Paul I just love your spirit. I have enrolled in George Brown College in Toronto, Canada this year to become a Chocolatier. I really wish I could come to England to take lessons with you because although I am dyslexic and have learning disabilities, which by the way, keep me timid, I understand your instructions clearly! I look forward to your videos, you don’t speak too fast nor gargle your words mumbling. You are an awesome teacher. May be one day I could save enough to fly to London to be in one of your classes. I am passionate about working with chocolate. I never thought I could do this given the fact everyone had labeled me learning disabled in my younger days. Thank you for helping my dream come true with your instructions.

      That just means you got to reread it It's okay to have dyslexia.
      Trust me I've been diagnosed with everything except psychosis sociopathy and schizophrenia.

    Tried this today, the chocolate came out fantastic and it had a really satisfying crunch when first broken!
    Tho i had no mould so i used baking sheets and small wide cups to make chocolate circles instead of bars.
    Still, really easy and a great personal gift to give friends or family.

    First time making chocolate bars at home, and they would not have turned out anywhere near as well as they did without the extra steps of tempering and shaking and dropping the moulds that you showed us. The scraping off the top of the moulds and adding the chocolate nibs turned out great too. (I used a new plastic drywall putty knife - worked perfectly).
    I only had soft silicone bar moulds, and, while they turned out better than I thought they would for a first timer, I've decided to purchase some nice clear polycarbonate moulds that are more like the ones you used in the video.
    Really appreciate you sharing your expertise, it made my project go a lot more smoothly, and I ended up with some fantastic chocolate!

    I have recently become very drawn to chocolate and candy making after years of interest in cooking. I find chocolate gives you so much room to be creative and there really is so much more to explore! Do you take on apprentices? Haha. Beautiful video!

    amazing! U just realized I should have gotten the Poly mould so I can bang to remove the air bubbles, what do you recommend for removing air bubbles with the softer silicone bar molds? thanks for sharing this is SO helpful!

    I've tried making a few bars recently, but for some reason there are random splotches of beige on the otherwise dark-brown surface of the chocolate, more specifically on the molded side of the bar. Any insight on how to get rid of this beige to get the straight, uniform brown?

    Paul, this is Paul. In your recipe to make tempered chocolate when your adding the chocolate wafers to the liquid chocolate you say its 2/3's Is that 2/3's of the five hundred grams "additional" or is the amount of the chocolate to be melted minus 2/3's of the five hundred grams? Would you break down the recipe for me. And also the recipe for the ganache (including how many ounces of liquor. TIA

    Will the chocolates get melted if wrapped and kept in room temperature? How to keep the chocolates stable without melting even at room temperature?

      The chocolate will need to be 'tempered' - tempered chocolate wont melt at room temp - untempered chocolate will - it's why he stresses the chocolate always has to be tempered - hope this helps

    And how about the recipe???? Did I learn how to make chocolate by looking at a guy basically pouring melted chocolate in in a mould??? Hardly I expect people need some ratios for the 3 ingredients to make a proper chocolate bar
