Don’t throw away the elderberry mix. I add them to vodka to do elderberry vodka base for tincture. You will be surprised how much juice is still in the “spent” elderberries. I leave cinnamon and ginger in it.
I add fresh ginger and more cinnamon plus added water to the strained cooked berries return to the stove and slow simmer for 20 mins then dilute even more, add lemon juice and monk fruit sweetener then refrigerate for a refreshing drink.
thanks for sharing. I make elderberry syrup but wondered if it could be canned. Everything i read said no bc it is low acidic then i found your video. How long is it shelf stable after being WB canned?

In the recipe above when you say 8 cups of water, you mean 8 cups of the elderberry juice that you strained off right? Also how much lemon juice?
She used 4 cups of dried elderberries, to 8 cups of filtered water.
Made 6 jelly jars and 2 pints. I work in a school. Those babies gots lots of germs and they don’t mind sharing. Lol
