What kind of wine!!! That is the secret! My friend, Ami Rovano taught me to make the rice years ago, but I forgot the kind of wine she used - that's the crux! I'll try sauvignon blanc, that should be ok...? I love this rice, so simple and so rich. Thank you, Jono.
This is a perfect technique for making risotto. The only way I would improve on it is to put on some appropriate music while you're making it. Preferably Verde. Thanks.

Few mistakes- rice needs to be stirring up all the time, don't use the lid, the rice looks overcooked .Never ever cook risotto after parmesan is added. Parmesan and butter must be added when rice is ready ,take the pan away from the heat. and stir very well. Also never use the brown onion , only shallots or spring onion. Very well showing how to add the stock and wine. Wine must be dry i like the Sauvignon Blanc .
I'm currently making this with Japanese white rice, apple cider vinegar, rip off craft parmesan cheese, and Argo corn startch. No onions are being used btw

Risotto needs to be light and mild and everything should dissolve together. The last thing you want is a wad of onion or garlic in your mouth. If you can't properly mince use a cheese grater. And yes, the other comment is correct this knife is horribly dull.

you don't have to use wine, you can just use stock
You can use a wine with no alcohol in it as well. My aunt had a few bottles for cooking and you still get the flavor.

No you dont wash arborio rice because risotto need a really startchy rice and washing the rice get rid of the starch

I don’t have short grain rice so ima do it poor people style and use a rice cooker with white rice and just mix it with the veggies and wine later
