- Risotto is a simple dish with just a few ingredients, and yet many people fail at making it. The perfect risotto can only be achieved with a lot of patience and instinct. Head chef Elvis Dollenga from the Milanese restaurant "Risoelatte" shows you all the tricks on how to prepare Risotto alla Milanese perfectly and how to achieve that special, creamy consistency. The special thing about Risotto alla Milanese: the saffron gives it its yellow hue. In the 16th century, one of the apprentices working on the stained glass windows of Milan Cathedral is said to have added saffron to the white rice to give it its special color. Today, Risotto alla Milanese is a classic of Italian cuisine. Italy is still the largest rice exporter in Europe. The rice is grown in the Po Valley, which is also known as the rice bowl of Europe. So it's no wonder that the traditional Milanese dish is risotto. You need risotto rice (only this releases the starch during cooking and constant stirring to create the special creaminess), freshly cooked beef stock made from bones and vegetables, white wine, parmesan and butter. And of course: saffron.

Risotto l'amongan is by far the best👌
I add a free twigs of saffron to a bowl with 3 ice cubes then cover until the risotto is almost done then add at the end just like Chef. It brings out the color and flavor more. Beautiful
Yummy 😋 When there is genuine passion put forth by a chef in baking or cooking, there is always something beautiful that comes from it. Chef, you made it look so easy to make, even though it was pointed out that it takes 30 minutes to make.
Grazie MILLIONI ..mmmmmmm❤
Certain kind of food demands a lot of patience as the Chef said.
Wonderful and delicious!
Looking delicious and also very beautiful, due to the process 🤩🤩😍😍
Hm..yummy
Hi Elvis! 😍😍😍😍🥰🥰
"More calories to enhance the flavour"
I've never seen butter white like that, is it a certain type?
Fresh butter is white. Probably they make the butter them selfes or buy it from some manufacture where it is done fresh.
The yellowish colour comes when its couple of days old.
Also depends what the cows had to eat. Fresh gras -> more yellow (because of carotine). Dry Hay (eg. in winter) -> white butter.
Cow’s in Italy are rarely free-range, except for mountain breeds, so they mainly eat hay. That gives it’s off-white colour.
It could be Italian buffalo butter which pretty white
In India we call it khichdi 😂 we just add more spices instead of cheese
I’d rather eat a Teocchew porridge
This looks kinda like daal
pretty smug that he makes it like i make it, minus the saffron!
The way she pronounces "Milanese" is really irritating
Risotto is gross. Soggy half cooked rice never tastes good no matter what you call it. Some of these culinary traditions I can only laugh at. Risotto is garbage.
A well made risotto is not garbage but your comment certainly is so I can only laugh at you 😂.
Probably the only risotto you ever head was at some indian take away.
Try real risotto, it will blow youre mind!
You've obviously never eaten a good risotto
Alright, now let the adults enjoy their times, go back to the kids table.
Have you tried it at a fancy restaurant? 99% of Italian restaurants outside of Italy either serve you raw rice with or rice pudding. It takes a lot of skill to make so you need to go to a quality restaurant.
