Hi from Australia. Really love your channel. I will admit that is cheaper for me to buy the puff pastry than make. I know it is cheating, but as I am getting older, it is way easier. Love all your traditional recipes. A man like you in the kitchen would bring back the love of cooking in me. Your wonderful
I love your channel. You are so genuine and not at all pretentious. Other RUclips chefs act like they are the only ones that know anything and are more than happy to throw all of their credentials at you. You just cook and I love that you don't use any high dollar equipment. I swear your pans lived through the Great Depression!
I make different fruit compotes with seasonal fruits available. So, 1 step is done already. 😊 I make pockets, little bundles with the dough. Thank you for your recipe, it's always a pleasure to watch. Bonjour, from Canadian Rockies
Wonderful! My mouth is watering ! In all my years of baking I have never made rough puff pastry. It seemed intimidating to me - but your instructions are so clear I think I’ll give it a go ! I’m retired now so I have got the time and I know my grandson will just love the result - apple turnovers for tea.! Yum yum, yes please 😁 Thanks again for a wonderful video and happy new year.
Happy New Year Dave. What a brilliant recipe to start off 2025. Look forward to cooking along with you again this year. You are such a brilliant teacher as your instruction is so clear and All your dishes are just yummy! Thank you for being you. ❤x
Who else wants to join me in a trip to Dave’s house for afternoon tea😂 🫢🥰my mouth is watering watching this, these look lovely Dave. Oooh Dave you mention afternoon tea just as I posted about that lol
I make these all the time but usually use ready made pastry from Aldi. Seeing how quickly and how much you made from this recipe , I think ruff puff pastry is going to be added to my book. Happy New Year Dave! Wishing you and your family a healthy, wealthy 2025 🎉
Happy new year Dave thank you for this lovely recipe these are my husbands favourite with whipped cream , great pastry too , I love a full on baking day , Amanda xx
Thanks Dave. Love your afternoon spread of mouthwatering baking for GBP8. So inspiring. You make this all look so easy. We made your sweet mincemeat deep pies for Christmas and they are outstanding. Best we’ve ever eaten 👏👏👏
Happy New Year to you another great reminder of my school years the last time I made this pastry, it does take time but well worth the effort I'm looking forward to all your future vlog's I love the way you are so relaxed in your teaching and make baking look so simple for people to follow x
Another lovely rustic dish. As others have said, I make something similar with whatever fruit I have on hand. Will have to give your dough a crack though, seems lovely. Also, uncooked, they freeze very well. Lovely to have a turn over "out of season"
Great baking recipe as always easy to follow and successful outcome evert time. Thanks Dave Happy 2025 to you and your family. Cheers to another successful year with your channel. 😊
Dave - your timing is PERFECT!! I have some leftover beef stew and intend to make a pie with it - with a puff pastry top, and here you are!! What a great start to 2025!! HAPPY NEW YEAR to you from Oz!
Another great recipe, was watching Jamie Oliver the other day and his new show is basically your format. Channel 4 should have had you as the presenter though!
A very happy New Year! 🥳🎉 That's a wonderful pastry. Never heard of it before, but I like flaky. And I like apple turnovers. And having a baking day 😁. So yes, I'll be trying these. As for the Christmas cakes I made after your instructions, I'll keep the one that got fed with alcohol. I used Amaretto, but will try brandy next time. It was a great success with the family. I ate the last slice today and it was as wonderful as on Christmas Eve!! Except for the fondant which turned soft and wet at some point and I scraped it off. I used only very thin layers of marzipan and fondant, but will probably do without next time. Someone suggested using Earl Grey tea. I did with a second cake, but it got mouldy on top in the 4th week of maturing. I cut off 1 cm of the top of that one and flamed it off with a crème brûlée burner, packed it with fresh paper and foil and put it in a different container. It held until New Years, but after that it started to mould again and I threw away about a quarter of the cake that was still left. I won't be doing that again, even though some of my family members and I preferred the taste of it over the Amaretto one. It was a great adventure and I loved trying something so very different than I was used to thanks to your wonderful instructions. It really is something else to let those cakes mature and enjoy their full aroma and flavour. Thanks again!
Many thanks and a happy new year to you. Sorry to hear about the mouldy cake....it might be better with an alcohol instead of the tea, the brandy worked really well for me.
Ooh, what a nice holiday tray of goodies. Whew, 3 USA apples would cost 2.43 UK. A tiny little 1 ounce bottle of ordinary McCormick vanilla extract is over $5 (who knew they made such little bottles?) so 1 t would be .68 UK. Cheap store brand butter is over $6 US a pound. All USA prices jumped over the holidays and haven't come back down. The vanilla went up .04 cents since Christmas.
Homemade puff pastry is nice but I will concede it's not something I usually have time to do. Fortunately, when not, the pre made puff pastry is pretty good.
Did he just say 72p for the apples?!? I live on the west coast of the US and I can’t figure where I’d get that price, even if I grew them myself! We have one of the highest GDP in the world - and even as “just a state” we outrank the UK in that respect. When I lived in Washington state (apple central!) I can’t recall finding such inexpensive fare.
I bet your home smells amazing on baking day!
Yes it does....there's nothing like a baking day. Thanks.
Thanks for showing how to make rough puff. I remember doing it at school many years ago but had forgotten how.
My pleasure....Hope you give the recipe a go.

Happy New Year Sir x
All the best for the new year to you too.
Informative and easy to follow as usual well done.
May I suggest listing all the ingredients so we can freeze the video and copy the list?
Thanks a lot....The ingredients are listed in the written description below the video.
@@BakingOnABudget brilliant, thanks for that I didnt notice.
Thanks!
Many thanks....That's greatly appreciated.
Great video,
Could grating the Fat on a grater get the same result?
Thanks...yes the fat can be grated but I prefer the larger flakes spread throughout he pastry. Grating is good for shortcrust pastry.
can shortening be used instead of lard in equal measure with butter?
Yes shortening would work or all butter. Thanks.
5:47 Is it okay to put the dough in a Tupperware or freezer bag, instead of cling film?
Yes it just want's something to stop it from hardening up on the outside. Thanks.
@BakingOnABudget great - thanks for replying :)

Yes we had a few price rises in the UK too....but I can still get basic ingredients at a reasonable price.
No lard here. May I use all butter?
Yes all butter would work well. Thanks.
Thank you.
😍
❤👍🏻
Many thanks.
Do you need bread flour to make puff pastry ? Does that make it more stretchy ?
I am just using plain flour here but you could use bread flour too. Thanks.
😮😊❤
Many thanks.
Homemade puff pastry is nice but I will concede it's not something I usually have time to do. Fortunately, when not, the pre made puff pastry is pretty good.
Yes the puff pastry does take a while to make I only do it on a baking day.

I thought 72p was expensive....but a few people have told me that the US is more expensive and others countries too.
