I have a Ball Blue Book copyright 1943! I use it every year. It was my mother-in-law’s. She went home to be with the Lord before I married her son. Her cookbooks are how I got to know her.
Wonderful video, Wanda!! Those peas look great. I started out using a Mirro pressure canner and now have a Presto. When I got me new stove, after several rounds of canning, I finally knew the lowest temp where I could safely can. I put a sharpie mark on my stove so I always know where to set the dial. Yes, I still listen to the weight, but that mark will also allow my partner and any family members to can on my stove if I'm not able to. Love the older Ball books! Much love and blessings!

Hello sweet Wanda! I sure love and enjoy your videos. I have that SAME Ball Book 1960 and a few others as my mom had them. I was lucky, as I got all her canning books, cook books, and recipes, which I'm honored to have, when she passed away. :) Especially, the recipes she wrote out, as well as some from my older sis who is 81 yrs. old. Even a couple my dad wrote out. What GIFTS they all are to me, written in their own precious handwriting. I have the last page of a letter written to my mom, from her Aunt Leonelle, that has a recipe for date/nut bread that she used to make and give away all the time, in HER beautiful handwriting. She made 6 at a time so I imagine they were the mini pan size. They are delish! Thanks for sharing so much awesome info with us... Love you!
I lost my older books, so I just picked up a new one. I will admit I'm a rebel canner for my own use, but I'm meticulous when processing anything. The time charts is all I really needed from the book..

I would suggest a Ledge piece across the bottom of each shelf for possible small earth quakes. If there is a small earthquake it could shake all those beautiful jars off and that would be a shame. Beautiful job and thank you for all the teaching.
We've had several small earthquakes even here in Michigan in the past few years. Enough to shake several things off my shelves. Luckily nothing broke but we have decided to put a few strips of wood across the big shelves in case it happens again. Luckily again my big stainless shelving has a small bead/lip so things slid to the edge but never went off. Very interesting scary feeling. Like someone picked up my home and gave it a shake and sat it back down. Like a snow globe
My hubby did that for all my pantry shelves. We live on the New Madrid Fault and it isn't uncommon to have a little shaker once in a while. Granted if it's a 6 or larger there will be damage, but I should be pretty good otherwise.

This brings back memories of my grandmother , she used to can but passed when I was 15. but she used to can outside over a fire in a big huge pan ,green beans I would see her do that miss her homemade blackberry jam .Wish I could have gotten her recipies but they went with her. Hi Guys. Thank you for the video. It’s always good to go over the basics and you did a great job of it. At the end of the video as you were in front of your pantry shelves, I saw that you have left the front open with nothing to stop the jars from sliding off the shelf. You may want to put a stop about half way up on the jars. It may save you in a storm or tremor. I did it to our shelves and it’s worked well.
I have that edition, too. It belonged to my mother. When I started pressure canning in 1972 I bought the current Blue Book at that time. Have continued to purchase them, over the years, as new editions came out. Have both of their large "recipe" canning books, as well. Have a few pdf versions of canning books that go well back in time. One of them uses the open kettle method which is no longer deemed to be safe. Another was published around WWII. Google search should turn them up, if the pdf is still available. One note of caution with the older Ball Books. There have been material changes in process & procedure between some of the editions. Probably the largest one that comes to mind, was in the 1990's with changes on how tomatoes are canned. That was due to the decrease in acidity of many of the hybrid varieties. Suggest buying a current issue of the Ball Blue Book which will have updated (as applicable) processing times. An alternative is the National Center for Home Food Preservation web site. When I'm using something from an older one, I'll use one of these resources to check for updates. Often, the key points are still the same. Yet, it is well worth the time to take a couple of minutes or so, to verify if that is still valid for xyz. Great point about not over filling the jars when canning green beans and peas from the garden. I canned 72 pints of butterbeans last week. (Purchased 2 20-lb boxes of frozen from a local restaurant supplier.) Overfilled a few of them with the resulting siphoning as water was pushed out of the jars. Fortunately all of them sealed. However, I'll have to keep a closer eye on them, as the seal may not be as strong.
Wanda, you are my hero! Keep giving us tips....we are listening and learning! I have my moms 1961 Lebanese cookbook..it is a treasure for making cheese, yogurt and lentils.
Great tips Miss Wanda. You have tons of experience so this isn't to question your practice, but to help those new to canning. If you screw your rings on too tight with your hand, your lids may buckle rendering your seal no good if it seals at all. As tight as you can get it with your fingers should be tight enough in most cases.
I found a copy of The Ball Blue Book of Canning and Preserving Reciepts edition g year 1915 at a thrift store. It also has a section on caring for fruit trees and vines. It talks about homemade insecticide s like kerosene mixed in with a half pound of hard soap and boiling water, or substituting 1 gallon sour milk for the soap if you have hard water or lime, whale oil soap in the ratio 1 lb. to 4 gal. water, fresh white hellebore 1oz. to 3 gallons water for contact insecticide, tobacco dust for destroying the wooly aphids on the roots of apple trees, or tobacco water in the ratio of 1 lb. stems steeped in 2 gallons water. Fascinating little book. The clerk thought I was crazy to pay $10 for it, and even more crazy when I danced my way out of the store!
You should be proud of that wall, a lot of work went into that. It's really pretty to look at too, you have a beautiful home. Up north I'm just waiting for our san marzano tomatoes to ripen, then I'll be canning them. This year we're canning carrots so can't wait to do that.

What a walk down memory lane...I'm still using a Maid of Honor (Sears) canner that my Mom received as a wedding gift in 1948 and a bunch of bail jars of all sizes that have her label still on that say '52. Just got some new victor seals for'em . Now if I could just find her book.
I absolutely love butter peas. What I wouldn’t give for a jar of those. My neighbor use to grow them every summer when I lived in Georgia. I’m definitely going to try my luck with them next year here in Arizona. I wonder if they would grow now I still have 4 months before any fear of a frost. I can’t grow a lot in this 112 degree weather we are having. My roses don’t quit producing until Christmas Day. I always put my last ones in a vase on Christmas Day.

Did you get the burners that were made for canning on your new stove? If you didn't, it may be something you would want to replace soon on it with the amount of canning you do. They are more heavy duty to hold the weight and not break your elements. I love that you have those old Ball Blue Books! I'm going to be on the lookout at yard sales and estate sales for some of them. I have the 2018 book I think and some of the recipes are to fru fru for me with not readily available spices etc. I like the basic recipes that I can season when I use them. Thank you, I really enjoyed this one!
I have the Blue Books that Wanda mentioned, including the 1960's that belonged to my mother. Been pressure canning since 1972 and have tried to stay current with the Blue Book editions. My approach to canning is similar to yours. I mainly can single ingredients without seasoning. Then I can use the meat or vegetable in all sorts of ways when cooking supper. Because I don't add salt, I can add a can of store bought corn beef, for example, without overloading the salt content of a soup. Single ingredient canning allows me to tailor recipes when family members with diet restrictions stop by. Can easily put together a soup that leaves out xyz that a brother or sister can't eat. Simply substitute something else, based on their needs. While I have the books and think they are worthwhile, over all, agree there is "fru fru for me", too.
Well the safe practices have remained safe for all this time. Some things are just basic facts. I wi I knew for sure that the new lids they make are as good as the old ones were. I have heard the new ones only hold for a year.

I was surprised to see that on new lids and jars. The way best by dates and things like that work, they only guarantee freshness that long. My guess is it is the same with the lids...guaranteed for 18 months, but will probably stay sealed longer.

Please research those orange Tupperware measuring cups online and make sure they are safe. I have read different research online for the yellow ones just like them that were released in the 1970’s and they had BPA, LEAD, and ARSENIC in them. May not be true but several different post said it so I chose better safe than sorry. I’m only 26 years old but I grew up with vintage Tupperware and my older family members are always passing it down to me since I love it so much
OH, wow! I used to have Tupperwear ones. But all I have now is two sets of stainless steel ones and even my measuring spoons are stainless. They were gifts. Good to know and share about the Tupperwear though!
I have mom's 1943 ball book. Missing front cover and kind of falling apart, so it is sheer protectors. Glanced at a few things. Oh my goodness. they give times for water bath cooking vegetables. But the recipes are such fun to read. I am having a difficult time locating butter peas seeds. Where can I find these seeds.

My friend from Alabama told me butter peas were immature/ baby lima beans and butter beans were the mature dried lima bean. But im not 100% sure ad she called things by some really different names than what I'd call things lol
Butter peas are different from Luna's. Completely different look and taste. They are also different from field peas, to me they have deeper flavor. The speckled are better than the green butter peas, to me. If you can find them give them a try, if you like garden peas these are a winner.

I canned 24 pints but looks like all or most of the water was absorbed by peas, kinda gelled like. Are these ok or do I need to open cans & freeze? It’s been within 24 hours.
It brings the skimming to the surface and i don't have that in my jar. Raw pack has all the sediment or skimming in the jar. I use fresh boiling water in jar
I was given a Presto caner exactly like yours. I was not given a manual with it. I am unable to get the manual from Presto, it says unavailable. Do you still have your manual and would you be able to share a copy with me? I have replaced the seals already but have not used it yet because I have a glass top stove and don't have enough to can yet. Thanks for sharing this info.

They've been working well so far.
I have been canning on my flat top for many years - No problem at all . I even use ‘daily’ , cast iron fry pans too . Absolutely NO Problem . 👍🏼😀

I was surprised to see that on new lids and jars. The way best by dates and things like that work, they only guarantee freshness that long. My guess is it is the same with the lids...guaranteed for 18 months, but will probably stay sealed longer.

Please research those orange Tupperware measuring cups online and make sure they are safe. I have read different research online for the yellow ones just like them that were released in the 1970’s and they had BPA, LEAD, and ARSENIC in them. May not be true but several different post said it so I chose better safe than sorry. I’m only 26 years old but I grew up with vintage Tupperware and my older family members are always passing it down to me since I love it so much
OH, wow! I used to have Tupperwear ones. But all I have now is two sets of stainless steel ones and even my measuring spoons are stainless. They were gifts. Good to know and share about the Tupperwear though!
I have mom's 1943 ball book. Missing front cover and kind of falling apart, so it is sheer protectors. Glanced at a few things. Oh my goodness. they give times for water bath cooking vegetables. But the recipes are such fun to read. I am having a difficult time locating butter peas seeds. Where can I find these seeds.

Are those what we call in the north, “Lima beans”?
My friend from Alabama told me butter peas were immature/ baby lima beans and butter beans were the mature dried lima bean. But im not 100% sure ad she called things by some really different names than what I'd call things lol
Butter peas are different from Luna's. Completely different look and taste. They are also different from field peas, to me they have deeper flavor. The speckled are better than the green butter peas, to me. If you can find them give them a try, if you like garden peas these are a winner.

They are not limas. They look like lima's shells but are fat like peas. Not a pea either.
I never cared for canned butter beans. Is there a difference in flavor if you blanch and put fresh water on versus cold packing ?
A little bit of difference because you are taking out the skimming before putting them in a jar.

I canned 24 pints but looks like all or most of the water was absorbed by peas, kinda gelled like. Are these ok or do I need to open cans & freeze? It’s been within 24 hours.

Can you tell us why you like hot packing over raw pack?
It brings the skimming to the surface and i don't have that in my jar. Raw pack has all the sediment or skimming in the jar. I use fresh boiling water in jar

I was given a Presto caner exactly like yours. I was not given a manual with it. I am unable to get the manual from Presto, it says unavailable. Do you still have your manual and would you be able to share a copy with me? I have replaced the seals already but have not used it yet because I have a glass top stove and don't have enough to can yet. Thanks for sharing this info.
