My mom cans pumpkin, not as chunks as everyone suggests but as purée. She has her whole life. It’s the thickness of applesauce and when I opened a 4 yr old jar last week it was fine. Made muffins.
Just put 8 pints of spaghetti squash in the canner. I cut the squash (3 large ones) into quarters, removed the seeds, and put them on cookie sheets with water 1/4 in from the top. Baked them for 1.5 hours, took them out of the oven, scored flesh into 1.5-inch chunks, and scooped them out with a large spoon. Put in fridge until tonight and then put into jars, topped with boiling water and we are off to the races. Have 3 more large ones left to do. I had around 16 of them from last year. I also save a lot of the seeds, as these were like Jack in the Beanstalk seeds, they went everywhere, out of the garden and up and over the fence with fruits hanging in mid-air. They don't seem to keep very long though as I lost a few to end rot after the harvest.

It’s in my Ball book, page 393, it’s titled Pumpkin or Winter Squash. Seems to follow what you did. I did use this method for preserving butternut squash and it came out just as yours did.

For the past few months, I have been undergoing chemotherapy treatment for bone marrow cancer. Also, I've been using intermittent fasting along with a no sugar diet to help my immune system to better recognize and destroy cancer cells. He had to remove a lot of the cancer before placing a stabilizing rod in my left humerus. I am just so thankful God is answering all our prayers. God bless you!

Thanks for doing this experiment. Now we know it won't be like spaghetti, but still edible squash. I wonder if they might stay like spaghetti squash if you cook it regular, pull it into strands and dehydrate those. I think it will stay more like spaghetti that way.
Jomama 02 - It rehydrates just fine. Because it’s so thin, it doesn’t take forever to dehydrate, and then the reverse is true to rehydrate. I often use it as the spaghetti in baked spaghetti. I use a bit more runny sauce and the squash absorbs the liquid. Definitely worth a try if you like to dehydrate!

I think when you open the canned spaghetti squash you'll need to cook off the excess water in order to use it like spaghetti. For pumpkins for pies could do chunks or Bev @halfacrehomeatead has a video on canning pumpkin puree, and a video on how she uses it. I believe for home canning it has to do with the consistency of your pumpkin puree, if it's too thick then the internal temperature doesn't get as high as it should, like canning ground beef, you never can it raw.

I'm still watching, but ya winter squash is perfectly fine to pressure can, I've done that a couple times so far. What I am curious to keep watching for is the texture of this type in particular. I'm trying to give up more carbs, I didn't realize how much I actually eat still, and I love squash anyway. I really hope this works out.
I wish you had tasted it plain before continuing with your recipe, especially before adding more salt. But thank you for the lesson. I was gifted way too many Orangetti squash (a sweeter orange spaghetti squash), and needed to know how it would come out canned.
I'm interested to see how this turns out in the long run. It would be great if it works because I would be game to give it ago we have just been storing our squash in a cooler area in our house because we don't have a basement or cellar but still by the end of the winter several of them have sprouted inside and turned pithy. It would be awesome to put what we probably won't get eating soon enough in jars rather than having to throw it all to the chickens.
Wanda I think it's great that you tried canning it and that it worked out one way I would differ the way I fixed it I would put the squash on the bottom and put some mozzarella cheese over it grated mozzarella cheese so that it turned it into like a crust and you'd have you a little love I guess you'd say a spaghetti squash pizza right by

why would you want to. #1 you can just store them for quite a while if they are the same as the full sized ones. #2, if you cook and dehydrate it, all you do is rehydrate with spaghetti sauce or some other kind of sauce and the meal is ready. If you can, it is a lot of extra work. Also, the dehydrated takes up a whole lot of less space. BTW, it makes great spaghetti
The only two squashes I know that are safe that can are yellow and zucchini Other types of squash it is not recommended because of botulism. Spaghetti squash to be preserved should be baked and Frozen flat as it will not hold any kind of structure if it is cubed it'll just fall apart.

I think I would blend a pint of this squash to my tomato sauces and blend. It should incorporate well, add some vitamins to the sauce, etc.

When I want to have a meatless dinner I make the spaghetti sauce and add zucchini to it it's perfect and it tastes great

Those new lids are sharp on the edges. Cut my finger grabbing one.
Possibly something in it with tannins when canning will help it hold some firmness.

You can instapot a whole spaghetti squash or butternut squash. Start at 20 to 25 minutes. Then you can easily cut them open.

You can also dehydrate it. Can even store longer than canning it.

I would toss the cut squash with melted butter and salt then dry can without liquid. It might stay firmer. What do you think? ❌⭕️🙏🏽♥️
