I would really love in the future for you to do a video on sharing food: how to think through a menu for your guests, when to prepare certain dishes and what to prepare when people arrive. Just all the tips and thoughts would be helpful. It can be stressful to get used to cooking for others.

There is a fashion in Armenia (since 10 or 15 years I think) to dig ancient recipes & try them again... maybe it’s all over the world ? Do you have a ancien recipe (that you’d hear from in a village ?) I find those recipes interesting because usually you get to learn a lot about how people lived, got together, sang & danced... You can tell the gender of the eggplant by checking the bottom. The male eggplants have a line where the flower blossom was; the female eggplants have a circle. The benefit of knowing this is that the male eggplants have much more seeds, so they aren't ideal for dishes like Babaganoush or steamed eggplant. #TheMoreYouKnow

I love love eggplants too. Im Indian and we have so many recipes all so different and delish and we call them as brinjal. I can eat this vegetable fried steam poached , in a curry however. I can eat it 365 days without getting fed up. 😋😋
I learned how to cook by watching Sara Moulton when she had her live cooking show. It was a "cook along" and she would take questions as she cooked. I still watch her show on Public Television and that was the first time I saw you! That was a good episode and I recognized you when I started watching this show on RUclips. So good, the three of us nearly finished off the whole dish the first time i made it. Now it’s really eggplant season here, and even though it’s 90 degrees F, I’m in the kitchen deep frying eggplant! But it’s sooooo gooood!!
Made it yesterday, and it was really delicious! Perhaps next time I'll try it with different peppers, the ones I had had quite thick skins. But other than that, it was extremely good!

Eggplant is my favorite veggie also! More eggplant recipes! I cut the eggplant into pieces, add fresh tomatoes or canned diced tomatoes and lots of onion and bake for an hour till it’s so soft! Salt, pepper, cumin, paprika, garlic. Yummmy.

eggplant known as baingan in India is very common vegetable here. Rather than pouring tomatoe puree on top ,we cook them together wd tomatos , onion, garlic & ginger paste.This receipe is knwn as "Baingan ka bharta" in India..!

Hello from Toronto, Love watching all your cooking shows. There’s one recipe I’d like to learn but don’t know what the name is. We used to eat that a lot whilst visiting Turkey. It’s a bit like Greek Moussaka but in small portions. There was some red tomato sauce with a slice of grilled or fried eggplant and then a creamy sauce which I believe included mashed potatoes. There may have been some ground meat also in the tomato sauce as well. If you can guess which dish I’m implying to, , would really appreciate the name of it and the recipe please. Thanks

Dear Refika, don't ever feel guilty eating fried food there. First, frying makes it tastier. But the understanding of fried food in Turkey (not the bird) is a common misconception. Turks fry vegan, but Americans fry meat. You know about fried chicken already, it is worldwide phenomenon now. There are also huge turkey - now, the bird - fryers for the Thanksgiving. I must tell you it is really delicious, but healthwise, I would not recommend it. You have to use three-gallons of peanut oil to fry a whole turkey in a huge propane-heated pots. They are very dangerous and it is done outdoors. It may take more than an hour to fry a whole turkey (20 lb.) by the way. There are also a variety of fried foods, such as, steak - as if it is really need to fry it 😁 You are a pro, you must have heard about "fried butter" I guess. If you haven't heard it, check RUclips about fried butter :)) So, no guilt about frying vegetables. It is even healthier with garlic yogurt sauce on top - the un-vegan version. Enjoy.

Looks awesome! We add roasted bell peppers, onions and carrots to that. I love it with sour cream.
