ZOBO DRINK

While Zobo Drink in Nigeria is a gift from the North, the whole Nigeria enjoys this delicious herbal drink and most make it one way but I make mine a different way.
INGREDIENTS:
1 Cup Dried Zobo leaves
1 TSP Black Peppercorns
3-5 Clove Sticks
Cinnamon Stick
A Large Knob of Ginger
1 Piece of Star Anise
3 Green Cardamom Pods
Dried Cayenne (optional)
Sugar or sweetener (optional)
Wash Zobo leaves and strain immediately
Roughly crush spices
Put water on and allow to steam before adding spices and pepper
If using sugar, add sugar here and taste as you go (skip if not using)
Once water has considerably boiled, add washed Zobo leaves
Boil for between 5 - 10 minutes.
Steep or strain immediately.
If using syrup sweetener such as dates or honey, add at this point
Chill, serve and enjoy.
