When using manual mode, do you have to do this process every time you make espresso or does the machine remember the setting that you just did (pre infusion time and extract time)?

The yield for a blank shot is more than yield with coffee. After all the coffee will retain about 1 oz of water. The small is true of pourover, French Press, etc. How much water is retained by the grounds depends on weight of grounds.
