No-meat Dumplings!

    Instructions and Recipe:
    Dough:
    650 g sifted flour
    350 mL water
    1 tsp salt
    2 tbsp olive oil
    Combine dry ingredients, slowly add the water in and mix together, knead dough into a soft, elastic, but not sticky lump, add olive oil and mix. Store in the fridge while you're making the filling
    Filling:
    200 mL veggie broth bring to a boil and add
    1 tsp agar
    let cool to a jelly (this will hold together the filling and keep it juicy)
    cut an onion in quarters and put it in the food processor with 2 cloves of garlic, chop them fine, place in a bowl.
    add 1.5-2 cups of Seitan and the cooled veggie/agar jelly to the food processor and chop until it's the texture of ground beef. Mix with the chopped onion and garlic in the bowl. add some fresh thyme (pull the leaves off the stem).
    Add salt and pepper and cumin to taste.
    Making the dumplings:
    put flour on the counter and roll out a third of the dough into a flat sheet, 1/8 inch thick or less. Cut out circles using a class or cookie cutter
    Place a spoonful of filling in the center of the dough circle, fold in half and seal the edges, so it's shaped like a half moon. Then take the points of the moon and mash them together so the dumpling is shaped like a circle or a tortellini
    or you can use a Russian dumpling mould for convenience if you have it, that makes it a lot easier to make lots at once.
    Once you have the dumplings ready bring a large pot of water to boil, then add dumplings and let them cook for 5 minutes, then strain and serve with thyme, vegan butter and sour cream.
