I had no idea any vegetable could be so incredibly delicious. Here we call Zucchini a "Courgette" but it's the same thing. Yes it has to be burnt, not black, but dark brown. Damn WHY do these taste this good?! Paired with any meat like chicken breast, beef, ham... one of the nicest things I have ever eaten.

I wonder if the thicker slice and searing on high heat helped to keep the zucchini from turning soggy during frying? Or is just because you are a great cook! Never thought to use paprika....will try it all your way next time as I really enjoy this dish. Many thanks.
That’s right, thicker slices prevent the zucchini from getting soggy. Also keep in mind, when you add the salt the zucchini will release a lot of water. The key is to continue frying until the water is completely cooked out :)

Lemon juice degrades very quickly with heat and it basically gets rid of all the sourness. Pepper is similiar, that's why no one puts pepper before making a steak, you put the pepper on once the steak is done and plated.
