I own both now. They both are EXCELLENT. You can’t go wrong with either. If the Cerax has a drawback, it is that it is a soaking stone, whereas Chosera is a splash and go. If the Chosera has a drawback, it is a bit pricier. Both have a similar feel under the blade, are about as equally as fast. It’s a tossup in my view. I like both equally. Yeah that’s very smart to clean up the stone as your working to insure that’s it’s flat and have fresh abrasive
