I worked in a butcher shop for several years. The amount of people that want "5lbs of ground beef in 1 pound packages and a quarter pound in its own package" so they can snack on the raw ground beef on the way home will astound you. It's an every day occurrence. One guy would ask people that just started at that shop eat a small amount of the ground beef raw. To try it. He even pays for it. You can eat ground beef raw. It has to be fresh. The stuff at the grocery store is so packed with preservatives and dies its not 100% ground beef. Real fresh 100% ground beef will brown(oxidize) after about an hour.

I’ve been eating RAW ground beef, grain fed, from the supermarket even, for 50 years. Never once sick from it, in fact feel amazing after eating it.

More in ground beef. Ecoli exists on the exterior of meat so when ground, it gets incorporated into all of the meat. Chopping a washed steak is completely safe.
Absolutely it can be. I recently watched Poisoned where there is a scene where a woman washed her hands while preparing raw chicken. It's eye opening to see how much of an opportunity there is to get cross contamination with food. I feel like when it comes to tartare you really need to be careful and smart about how you prepare it.

More technically, it exists on the exterior of meat when improperly slaughtered. E. coli is poop. If the intestines are perforated during slaughter, said poo can then get onto the meat, which if subsequently ground contaminates all of it. A steak on the other hand even if contaminated needs only the surface seared to kill it, which is why a rare steak is fine but raw ground beef is more questionable.
You should never "wash" a steak. Pat dry with paper towels, maybe, but nothing else.

Just ate homemade tartare, sometimes i take a bite from raw steak, never had problems.
Another thing, the reason ground beef isn’t safe to eat raw is because the quality control on it is a lot lower. Also the long prep time and handling of the ground beef, tray, grind, weigh, and pack. That all equals to more risk of contamination.
I wonder, does a bit of alcohol like wine or beer in tartare make the dish safer to eat than normal?

It’s all about quality when you eat raw meat. You wouldn’t go to Walmart and buy a salmon filet and have sashimi. You’d go to an actual butcher and get sashimi grade fish. Another thing, it also depends on the persons immune system. Some people get sick from fermented foods. No matter how fresh, some people’s body just can’t handle certain foods. People don’t understand that getting sick over raw meat isn’t as common as you’d think. I work in a well known restaurant in my city. I’ve even prepared medium rare duck, medium rare pork. Most people are just delusional, sure in the 1900 we didn’t have qc and usda but now we do. I’ve also worked with usda at Cargill meat solutions.
Well said. It's just not a common practice in the US to eat raw meat, therefore there isn't a market for it. If you travel to other countries such as Japan it's not uncommon to find restaurants service raw chicken. Since they have the market they have farms that control the diet and cleanliness standards from the second they hatch to the time they are butchered making it safe.

Yeah it is frustrating. I can tell you that ive done veganism and ive done a raw meat diet. And ive never gotten sick from eating raw meat. I did get really ill from veganism after a year, came close to dying actually i think.

I'd say that it's challenging comparing risk factors with raw beef and raw egg as the risk factor depend on the source of the ingredients and handling practices, but in general both carry a risk. However, if I had to roll the dice, I'd try to make an argument that the egg would be safer with the regulations that are currently in place.
@@kitchenconquest same as meat you have to know your quality grade. If the eggs are pasteurized AA, or meats usda stamped. It really all comes down to quality and freshness as you say. Eggs in happen are a lot more clean and safe, same goes with their meats.
E Coli isn’t harmful. It’s naturally in the meat. It’s fine.
129F will pasteurize beef as ling as it dwells. 160 is an instant kill temp, bit it also ruins your burgers.
I have eaten raw ground beef daily and on occasion, have gotten Giardia. Which will cause yellowy green stinky acute diarrhea for about 2 weeks til it clears. Overall though it's pretty safe.

You can eat raw ground beef. I'll Just try to avoid getting overly scientific but just like the fish in civiche is being sterilized and "cooked" by the lime juice. The juices from the onion/shallots added to the beef cooks it. Even then thats an extra precaution without it (outside of low quality high fat content ground beef ) most ground beef can be eaten raw.

I actually know a few people who do eat raw hamburger. I don't know how anyone could eat cold raw meat with raw eggs. The fear of sickness would totally overwhelm any "good" flavor it had. The raw slimy texture would definitely make me gag too. I just couldn't.
I had reservations my first time too, but it was delicious! I would never buy ground beef directly from the store though, the issue for me is that it's difficult to be 100% sure it's safe unless you make it yourself, or are at a trusted restaurant. I hope one day you try it, as you only live once!

I get my ground beef from a grass fed grass finished farm in Georgia. I started eating the beef raw for two reasons: very convenient to just thaw out the beef and start eating right away. Being a truck driver, I have to prep my meals for 6 days, so it would take me about 3 hours to portion out each meal and cook it. My second reason is due to red meat being so high in fat, when it’s cooked, it would take like 5 bites to already feel satiated and full. As someone who is very strict when it comes to calories, I found it very hard to get enough calories in only eat beef because of feeling full all the time. So when I started to eat the beef raw, I could eat a pound in 30 minutes feel as full as I would with eating 5 bites. Especially when it takes about 2-3 pounds of beef a day to get to my calorie goal. Hope this helps. (P.s. after you cut out seed oils and fake sugar, your taste buds will go back to normal. In my experience, raw beef, raw liver, raw heart, raw testicle, raw egg yolk. The flavors are amazing.

When the steak is cut into small cubes the bacteria in the meat is canceled via the cutting action. You can do this with any meat especially pork, chicken and squirrel. I never cook meat.
