Made this for dinner! SO delicious! I made the sauce early in the day then used my air fryer to cook the cod (olive oil spray and panko crumbs on top) at dinner time. Warmed the sauce in the microwave…perfect! Roasted asparagus on the side. And I had enough sauce to freeze and save for another dinner. As always, your recipes are so easy and really tasty! I remember my grandmother would make this dish for dinner on Good Fridays. Today, (April 7, 2023) is Good Friday and I will make it later this afternoon. This recipe is very similar to my grandmother's. She used more tomatoes than what this recipe called for but also more pimenton (pimenton ahumado + pimenton dulce) and she would use the frozen salted cod (soaked in fresh water overnight with multiple water changes) or, if that is not available, she would use salted dried bacalao which she would also soak in water overnight. I will use this recipe and buy some fresh bacalao loins or filets. I will pair this with arroz azafran con verduras (saffron rice with vegetables).

We make bacalao en salsa. Almost the same, but the sauce is not blended and the veggies are soft. From the Cuban cookbook (and my mom) Cocina al Minuto. Could add some capers for extra tang.

What can be substituted for bell peppers in ALL of your recipes? As I have aged, my body has ceased to be able to digest them. I can't make any recipe that contains them. Please tell me there is something that can be substituted for the bell peppers.
