SPY x FAMILY - YOR'S TASTY STEW Recipe

  • To celebrate the SPY x FAMILY anime, I made Yor's stew from the manga. She really loved her mother's stew & wanted to recreate it for her Anya and Loid for them to enjoy her food and smile from it. I also want you to have a smile on your face after eating Yor's stew so I recreated it for you to make & enjoy eating too. Based on chapter 24 of the manga, I found the stew is a variation of a traditional Austrian goulash, fiakergulasch.

    Ingredients
    2.2 lbs of beef shank
    1 3/4 lbs onions
    1 wiener sausage
    2 eggs
    1 potato
    1/2 tablespoon of caraway seeds
    1/2 tablespoon of dried marjoram
    4 tablespoons of sweet Hungarian paprika
    1 tablespoon of tomato paste
    1/2 tablespoon of vinegar
    3/4 teaspoon of salt
    2 bay leaves
    1 1/2 tablespoons of sour cream
    3 cups of water
    3 pats of butter

    Recipe
    1. Cut beef shank into 2 inch cubes. Remove exterior fat from the meat.
    2. Cut onions into half moon slivers
    3. Cut wiener sausage into bite-sized pieces
    4. Put a pot on stove top & turn it on to medium heat
    5. Add one pat of butter to pot
    6. Once butter has melted, add beef chunks into pot to brown on all sides
    7. Once beef has browned, remove it from pot & put in a bowl for later
    8. Turn off stove top after removing the beef from pot
    9. Save flavorful brown bits at the bottom of pot. Remove leftover butter with paper towel.
    10. Add 1 cup water to pot
    11. Turn on stove top to low heat
    12. Scrape the fond, AKA brown bits, off the bottom of the pot then turn off the stove top. Put the fond and liquid in the same bowl as the beef.
    13. Caramelized onions. Add 1 pat of butter to the pot.
    14. Turn the stove top on to medium heat.
    15. Add the onions and stir the onions in the butter
    16. Stir the pot occasionally and caramelize the onions until they are a nice golden or dark brown
    17. Add tomato paste
    18. Add the marjoram
    19. Add the caraway seeds
    20. Stir contents of pot for 1 minute to toast seasoning
    21. Add paprika. Stir quickly for a few seconds
    22. Add 1 cup of water then stir
    23. Add vinegar then stir
    24. Let mixture reduce until the liquid is gone
    25. When reduced, add beef, beef juices, & fond then stir
    26. Add wiener sausage then stir
    27. Add bay leaves
    28. Add salt then stir
    29. Add 1 cup of water then stir
    30. Add sour cream then stir
    31. Cover pot & simmer on low heat for 3 hours
    32. Leave stew in the fridge overnight to meld all the flavors together
    On the next day prepare potato & eggs while heating up the stew to serve
    33. With a cleaned potato, cut center of potato a little below the skin
    34. Score center of the potato
    35. Put potato in a cold pot of water on the stove top
    36. Turn on stove top & boil water to cook the potato
    37. Potato cooked when easily pierced with a knife or fork
    38. Turn stove top off when the potato is done cooking
    39. Cool potato with water then remove the skin
    40. Put pan on stove top then add a pat of butter to the pan
    41. Turn stove top on to medium heat
    42. With melted butter spread throughout pan, crack 2 eggs next to each other
    43. Cook eggs until edges turn brown
    44. Once edges browned, remove pan from stove top & turn off heat
    45. Plate stew then add the potato & fried egg
    46. Break egg yolks to look like Yor's runny eggs
    Optional: Fan-cut gherkin
    Fan-cut gherkin from one end to a little bit before other end with 4 to 5 cuts in it. Spread out cuts like a fan & put it on the side of stew to garnish.

    That's very similar to Soljanka!
    Very popular in eastern Europe and eastern Germany. And thus VERY fitting as a dish from Ostania.
    The only real difference is that for Soljanka you'd cube the pickles and add them to the stew, together with the pickle juice, while it's still cooking.

    Can you do an classic anime meat stick like what luffy eats the meat with the bone in the middle though it , it appears in a lot of anime
