This is my favorite food, this is how my mom does it too. It's comfort food for us especially now it's cold weather. One time we made with quail eggs too. And it lasts a few days in the fridge if you don't want to cook during the week.
Here in the Philippines we have similar style of cooking called "Adobo" it differs from one region to another region. One version of adobo is cooking pork or chicken or combination into a stew w/ garlic, ginger, soy sauce, vinegar, brown sugar, pepper corn & leaves, water w/ hard boiled quail's egg (MSG is also optional). The garlic is first toasted in small amount of oil then the meat is stir fried until brown then other ingredients are added except the vinegar & the eggs then let it cook in low heat until the liquid sauce bubbles into a boil for 15 mins then add the eggs & vinegar last then let it boil again for another 15 mins.

Chris Batta I make a variation of this in my instant pot! Use the meat/stew setting and adjust the pressure to high. Add all the spices and seasoning with water after you caramelize your sugar in your IP. For pork belly i set the time for 45-50 mins (sealing) and it is very tender. Definitely cut the time in half for chicken. After venting, add the eggs for 5 mins to get some color. Good luck :)

How did you get your eggs peeled perfectly like that? I consider myself a pretty good cook but I cannot seem to hard boil a perfect egg!! Help me!! :-/
Tum V After boiling the eggs, remove the eggs and shock them with cold water. Let the eggs cool down to room temp before peeling but don't let them get too cold.

I have seen the pickled mud carp fillet at SF Market and Lion Supermarket, but can't remember how long ago.

Can I use silver swan soy sauce instead of black soy sauce if I don’t have it on hand ?

Peter Sour you have to cut the tip with a knife. Then you have to find your own way to cover it when not in use. I just use plastic wrap to cover it.
